It is so dark in my house that I am having to put the lights on and its only just gone 4 I hate this time of year

The lights are on here, and we've got a light on a timer in the side passage for the quail, so they they still get their 14 hours, and lay for us

Sea salt or malvern salt with red peppercorns, dried chillis and star anise. Smells wonderful. It looks good in the jar too

What proportions of star anise etc to salt do you use?

Ok here goes...

 

250g good quality sea salt or Maldon salt

2 tsps red peppercorns

2 tsps crushed dried chillis

4 star anise

 

1 x 500ml jar or 2 x 250ml jars

 

Sterilize your jar(s)

 

Mix the salt with the other ingredients

 

Tip into the cooled jar(s)
