fluffyknickers
Now I have my new Kenwood processor attachment I would like to make some yummy coleslaw. Anyone got any good recipes? I dont really like raw onion. Michelle
ClaireG
I use red onion sometimes in mine, they are milder than normal onions so you don't get such a strong onion taste. I use carrot, red cabbage and apple and the red onion (sure it would be ok without) and then add according to my mood and what i'm having it with, either sultanas or raisins, seeds or nuts of some kind. For the dressing i use equal parts of mayo and natural yogurt with some lemon juice. Again, i also add the additions of grainy mustard or a bit of curry powder depending on what i'm having it with and to ring the changes. Sorry i don't have measurments i tend to guess and taste as i go along
..lay a little egg for me
I just use white cabbage sliced thinly and grated carrot mixed with home-made mayo with just a splash of white wine vinegar. I find most bought coleslaws far too vinegary. I like Claire G's recipe too.
chickencam
Red cabbage gives good flavour as does apple and celery. You could use a few spring onions or chives to give a light onion flavour. Also if you grow your own grated turnip radish or kohl rabi make a nice addition. We love our onions here the more the merrier
Cooks
3 parts mayo, 1 part four seasons dressing is a nice coleslaw as well.
missuscluck
Some interesting variations there. We love home made coleslaw. I usually do 2 parts mayo and one part salad cream. This formula works well for potato salad with some nice chopped chives fresh from the garden.
Egluntyne
I usually do 2 parts mayo and one part salad cream. Ditto. Mayo on its own is too rich for our taste, and salad cream on its own is too vinegary.
Becka
I use the recipe for both the mayo and vinegar styled coleslaws from the following site. I do however vary the ingredients that I use ie red cabbage, celery etc. http://simplyrecipes.com/recipes/coleslaw/ Another recipe that is similar in style ie chopped/sliced veg is this beetroot and radish salad which is very refreshing and a bit different! http://www.ecurry.com/blog/soups-and-salads/salad/zest-colors-add-some-to-your-life/ This has been part of my plan this year, to encourage more healthy eating in our family and to try to include some less used vegetables while I'm at it! fluffyknickers
ooh yum thanks everyone. x
chickencam
I made some last night with a mix of mayo and salad cream as suggested here and it tasted good. I did end up with purple hands though because I used a red cabbage. Normally they are not that bad but I still have some staining on them now even after several scrubs and a bath
Jules.
I'm going to have a go at making this today. I've bought super low fat mayo & a white cabbage & carrots & I get to play with my Kenwood chef's super-sharp slicer
majorbloodnock
Personally, I like to make my own mayonnaise with a mild olive oil (i.e. not virgin oil, which IMHO gets a bit overpowering in mayonnaise), then add a little horseradish sauce to it before mixing with the carrot, cabbage and onion. As an alternative, you could also try a hot slaw (clicky linky)
