Mrs Frugal Posted October 18, 2006 Share Posted October 18, 2006 I make these for my faddy boys to put in their lunchboxes because they have a secret ingredient - beetroot - which is good for them but which they won't eat otherwise. They don't know it's in the muffins . Magic Muffins 10oz plain flour 2 tsp baking powder 1/2 tsp bicarbonate of soda 2 tsp ground cinnamon 3 tbsp unsweetened cocoa powder 1 egg 4-5 oz soft brown sugar 2 fl oz milk or water 2 tsp vanilla extract 2 cooked beetroots - grated 1 eating apple - skinned, cored and grated 3 fl oz sunflower oil 3 oz raisins or chocolate chips 1. Prepare muffin tins by lining with paper cases or grease well. Preheat oven to 190-200C 2. In a large bowl, sift together flour, baking powder, bicarb, cinnamon and cocoa powder. Set aside. 3. In another bowl, beat egg with a fork. Add brown sugar, milk/water, vanilla, grated apple, beetroot, raisins/chocolate chips and oil. Mix well. 4. Pour wet ingredients into dry ones and stir until just combined. It will look really lumpy but don't worry - that's how it should look. So long as no dry flour is visible, it's fine. 5. Spoon into tin and bake for 20-25 minutes until tops spring back when pressed gently. Cool on wire rack. Quote Link to comment Share on other sites More sharing options...

Every time I've made muffins (not many!! ) I haven't needed to do this. So next question - do you grease with butter, or..... something else.... I admitted to the grated apple as neither of them like cooked apple but drew the line at admitting that there's a *shock!!*......vegetable.......in them too ! Chooks Aloud Posted November 2, 2006 Share Posted November 2, 2006 I made these at the weekend - next time I will leave out the cinnamon, it completely spoils the chocolaty taste. My daughter hates beetroot - but didn't guess it was in the cakes, she just commented on the overpowering cinnamon taste. The cakes themselves rose lovely and had a good springy texture.
