xraylady Posted October 31, 2006 Share Posted October 31, 2006 Cannot decide what to serve for a 'meet-the-chickens' brunch we are hosting Nov 12th. Friends & family are coming (about 20). My chooks arrived Oct 12th, this will be their society 'debut', and I am looking for some fun, easy, egg-based ideas to serve folks. Brunch is big here in the US - if I could hire a caterer I'd do omlettes - but don't have the dollars. Don't fancy being stuck in the kitchen cooking for my guests either, would rather have stuff ready to eat when they arrive. So I am fishing for ideas - what would you do? (P.S. my 4 year-old daughter has drawn portraits of the chooks. We hung them up above the Eglu run - "so that the guests can tell the chickens apart." Adorable.) Hard boiled egg yolks enclosed in sausagemeat, rolled in breadcrumbs and either oven baked or deep fried until cooked. Or individual custard tarts? How many eggs do you have Sarah? A cake is good: the orange and almond cake (which I'm sure must be in the recipe section) is good and has 6 eggs in it. Oooh, I like the mini quiche idea & the custard tarts mmmm! Unfortunately, sausagemeat in Utah is a pale imitation of what I remember growing up in the UK (sighs) nasty, gristly,fatty stuff here, yuckkk! I think it would be nice for a brunch with some crusty bread.You could make it in advance up to the bit where you add the eggs, and finishing it from that point won't take long. You can increase the amounts really easily (we often do more eggs per base mixture too, if we have a lot to use up & are hungry!) MEXICAN EGGS Fry 1 chopped Onion in olive oil Add 2 cloves chopped garlic, 2 tsp Cimmin seeds & 1-2 fresh chopped chillis (or 2 tsp ready chopped chillis) fry for a minute,& mix together Add 2 tims chopped tomatoes in rich juice & a pinch of sugar. Turn down & simmer for 10 mins Season & add 4 tbsp chopped coriander. Make 4 hollows in the hot mixtue, & break an egg into each one Scatter with grated cheese & cook gently until almost set. Thank you all so much! Vol-au-vents are a fab idea - so easy, but they look so elegant, like you slaved all day cooking. And egg mayo + extras + garnish in them would look real fancy! The MexEggs dish sounds delish! I have a huge electric skillet, which I use to make pancakes. It is deep & has a lid so maybe if I can convince one of the guys to play chef. . . I think this will be a fun party - hopefully the weather will co-operate so the girls can come out & play & show the rest of the world how adorable they are - you guys don't need convincing of that, I know! My health has prevented me from hosting big parties for the last couple of years - used to have dinner parties all the time - but brunch is great. Early in the day & everyone gone by 2pm - or they should be. The Dallas Cowboys kick-off at 2:15pm and that is a sacred moment in this house! Got into some right pickles when I forget, and refer to garments as 'knickers', 'pants', 'panties','vest','undies' etc. Blank stare from patient. Not nearly as embarrassing,however, as the classic request for a cigarette break "ooh I'm dying to go outside & suck on a fag". . . conversation comes to shuddering stop, nervous looks all round "did she just say what I think she said?" Fortunately though most people regard my linguistic slip-ups as either a) quaint or b) they couldn't understand my accent or c) they don't speak American English either. It cuts both ways of course. Whenever I need a giggle I can open the Yellow Pages to 'S', turn to the pages that list companies that lay turf for lawns, (referred to by a 3-letter word beginning with 'S') & see emblazoned across the top of the listings S*D & S*DDING SERVICES.
