a lovely courgette soup

Just what I needed, yet again I have been rescued by my fellow omletteers! Have just been out to the garden (having not ventured out yesterday for fear of what I might find!), I'm sure there must be at least twelve courgettes/marrows out there and I already have 4 in my fridge from Saturday! Guess what's for tea tonight! And for dessert!

Just thought I'd bump this :D

 

OH decided he didn't want chocolate courgette cake as he's trying to cut back on naughty food :wink:

 

But I needed a way to use our courgette glut, so I thought to myself "I'll type courgette into the all things nice search and see what happens". I came upon this soup :D

 

I too used onion, I didn't have any tarragon so used mixed Italian herbs, and I also chucked in some garlic. The result was an acceptable soup. Not the best soup I've ever tasted, but certainly nowhere near the worst!

 

OH announced "I'm not eating courgette soup, it'll be disgusting" so I politely informed him that it was courgette soup that I was making for lunch so he could take it or leave it... He took it... And said that it tasted nicer than he expected.

 

We've now got a portion each for lunch tomorrow or to stick in the freezer, and my fridge now only has a few squashes and some yellow courgettes :dance:

Here is a courgette soup that I tried yesterday and it worked out well. Thought I would post it incase anyone wanted a slightly different soup to use up those courgettes :)

 

1 lbs courgettes sliced

2 medium potatoes chopped

1 onion chopped

2 pts stock (chicken & veg)

8 ozs somerset brie (in pieces)

salt/pepper

 

Saute the vegetables then add the stock and simmer for 15 min

Cool slightly, add brie and stir until melted

Liquidise

 

ps. I cut off most of the rind of the brie.

 

I must try that cake recipe. I will need to pick the courgettes as the slugs are working their way through them :evil:
