Tastes fantastic, is easy, and great for when OH either is out, or eating something that I can't as want to look reasonable in a bikini on the beach next month... Cinnamon Posted October 8, 2010 Share Posted October 8, 2010 My favourite Butternut Squash recipe is this one,which I have been doing for years. HALLOWEEN BEANPOT fry 1 Onion until golden Add 1 large cubed potato & fry for 1 min Add 500g minced Beef & fry until the mince is brown Stir in 2 TBSP of madras curry paste, & fry for 2 mins to fire up the spices Stir in 1 cubed & peeled Butternut squash & 300ml boiling water. Cover & let it simmer for 30 mins....................it will go all juicy & wonderful. Lightly mash with a potato masher, then add 1 large can of baked beans. Warm through & there you go. Looney Posted October 12, 2010 Share Posted October 12, 2010 I made the Halloween Beanpot, thanks for the recipe Sarah I only mashed half of the meat/squash/potato mix as felt it would be too splodgy otherwise and am really happy with the result and the texture- a bit splodgy and a bit lumpy!!
