Cinnamon Posted March 5, 2010 Share Posted March 5, 2010 I made this last night - BIG hit in the Cinnamon household! Half 20 cherry toms & fry them very gently until they are all oozy & lovely Add a crushed clove of garlic & half a teaspoon of dried chilli flakes - cook for another minute of so. Add a tin of chopped tomatoes & a teaspoon of sugar, & cook down gently for 5 mins. Season,then add a couple of large handfulls of spinach,& cook until wilted. Daphne Posted March 9, 2010 Share Posted March 9, 2010 We have tomatoes on pasta about once a week - thanks for this, I've not tried putting spinach in before. I always worry we're aren't having enough vegetable - for some reason in my head tomatoes don't count - so this will make me feel better! I really like the Trattoria Verdi/Discount Brand in Tescos tinned toms (this comes of having a boring life involving a chef friend who once did a taste test....) fluffyknickers Posted March 9, 2010 Share Posted March 9, 2010 This reminds me of something I used to do a lot and havent for ages... Cut open cherry tomatoes and place on a baking tray (so the skin side on tray). Sprinkle on finely chopped garlic and sea salt (Maldon is best - I live in Essex so have to say that!) and if you want you can add things like chilli and then drizzle all over with olive oil. The place in the oven on very low and leave for an hour or more until they go all lovely and goey and kind of sun dried. You can then add to pasta and chuck in whatever you fancy like ham.
