Lavenders_Blue Posted April 1, 2010 Share Posted April 1, 2010 I have cooked okra before. Depending on whether or not you like the slimyness (!) be careful about topping and tailing the okra. Leaving it whole will mean the slime won't leach out as you cook it. Chopping it or topping and tailing will cause the slime to come out. I think if you are cooking gumbo this is what you are supposed to do, so it thickens the dish, but for something like bhindi bhajee you would be better to leave it whole. Tried to order it at an Indian restaurant once as a side dish - but they had run out. I've had quite a cooking spree today and will be up to my eyeballs tomorrow. I made a BIG mistake and sliced it in half - slime city! As a vegetable - I didn't find it had much flavour. MAybe better in an idnian dish and when I have more time.....
