Courgettes and Squashes

right - you know when someone tell you NOT to plant 16 plants :shock:

 

and you ignore them :shock:

 

well, thats what I did :shock:

 

now we have LOTS of courgettes and squashes :D:D:D:D

 

and in the terms of the book "what am I going to do with all of these courgettes??" :lol::lol::lol:

 

any ideas people?????

Ah yes,the annual courgette glut :roll::lol::lol::lol:

 

I think I started a thread about this a year ago,so it might be worth doing a search............

However,this time of year,I add a courgette to everything!

Any Chillies,Shepherds Pies,Bologneses all get the added bonus of a courgette or 2!

 

Hubby & Cleo HATE the things & this is the only way they will eat them.

 

Devon & I have regular ratatouille & Courgette & Parmesan Omlettes,which are truly delicious.

 

Any spares,the hens get :roll::lol:

 

I have been known,in moments of desperation,to foist them upon anyone who knocks on the door too :lol:

My Dad is a keen allotmenteer and always grows far too many courgettes, much to my Mum's displeasure :lol:

 

Courgette bread is great, it would be worth seeking out a recipe for that.

I got sent home with a courgette on Friday and added it to to a Thai curry I was making. Totally unauthentic but it tasted great.

Definitely make courgette quiche, in fact why not make a few and freeze them?

I also have a cake book called "Red Velvet, Chocolate Heartache" which uses vegetables as the base for the cake mixtures and lots of the recipes use courgettes.

 

Finally... if you can't face doing any of the above, just chop them, put them into bags and freeze them. No blanching needed so it couldn't be easier, and they freeze really well. This is my Mum's preferred method of dealing with them as she doesn't have to use them all at once and they make a nice change in the winter when she is sick of cabbage! :lol:

I found the ones I froze last year have got a bit of a mushy texture when you use them.

Courgette soup sounds good. I have never tried that.

 

I make a courgette bake sometimes that even my veg hating son likes. In fact we are having it tonight with some sausages as I too have a cougette problem at the moment and I only planted 3 plants :lol:

 

Slice up the courgettes any way you prefer, long ways or short ways and lay in a dish lasagne stylie with layers of tinned tomatos. Make up a mix of about 1/4 pint of veg stock (i use oxo veg cubes) with some olive oil, garlic, parsley. Drizzle it over the top then cover the whole thing with breadcrumbs and grated cheese. Bake for 3/4 hr ish.

 

Sorry thats typicaly vauge as per most of my 'chuck it in and see' recipies :oops:

The courgette Fritti sound nice - I'll be making those. I wonder if the Actifry could cope with them?

 

I'll have a go at the veggie bake as well - I thought I'd got 10 plants but I found another 2 :roll:

If I'd only planted 4 plants then they would have died :roll:

Courgetti spaghetti - fry a chopped onion, chuck in grated courgette, grated lemon zest and the juice of a lemon, mix with cooked spaghetti and parmesan. Also nice with chunks of bacon or pancetta mixed in.

 

Or to take it further a variation on carbonara http://myyearbyfood.blogspot.com/2010/06/friday-flash.html

 

Use a veg peeler and slice into ribbons, have as a salad with cannellini beans and feta with a lemony dressing. That's on the blog too.

 

Courgette fritters - grate it, season, mix with beaten egg and fry.

 

Squashes make great wedges to go with chilli.

leave out the sugar though as it can end up too sweet.

 

If small acorn type squashes do a Valentine Warner, slice off the top and scoop out the seeds, season and fill with a mix of cheese (gouda or gruyere work well) chorizo or pancetta, put the lid back on and microwave for :think: I can't remember how long, a couple of minutes and then stab to see if it needs more!

Glad I saw this - had glut of eggs so gave 6 to my hairdresser - who was delighted and gave me a load of courgettes off her elderly mums alloment - mum supplies whole street and I think my lovely hairdresser was trying to get shot of them :lol: I will make a cake and a souffle

Panic over found it but I dont know how to put it here for those who might want recipe - searched on courgette and beetroot and it came up on seasonal cakes.

 

Good point - I think I'll start a separate thread as I had the same problem when looking for the cake recipe.
