All you really need is an assortment of red berries and some good quality red jelly (best getting jelly crystals rather than the kids' party jelly, but that's only my preference). You may want to make up the jelly with slightly less water than the instructions ask so the resulting jelly will end up a tad firmer. Basically, you get a deep pate dish and pour a wee bit of jelly in. Arrange some of your berries in a fairly thin layer on top, then pour enough extra jelly to cover, then keep adding layers of fruit and extra jelly until you've filled up the container. With careful arrangement, it can look stunning. Leave to set, then turn out onto a plate to serve. Although you're using a sweet jelly, the overall effect can actually be quite tart, especially if you have a fairly high proportion of redcurrants. As a result, whilst you could simply serve with cream, I'd personally take the trouble to add some sugar and a smidge of brandy whilst whipping to make up some Chantilly cream instead. chick wiggle Posted December 8, 2011 Share Posted December 8, 2011 Allright, as its you, Im giving you my secret Lemon Snappy Tart recipe but you have to keep it quiet ! Its our favourite and you could easily make it xmas eve and keep in the fridge for boxing day. Its very sweet so you only need a little slice each so plenty for 9 people 300g ginger snaps, crushed 125g butter, melted Freshly squeezed juice and finely grated zest of 5 lemons 397g can condensed milk 300 ml double cream Mint leaves, reaspberries and strawberries to decorate before serving Icing sugar to dust. 1. Stir the melted butter into the crushed biscuits and spoon into a 20cm flan dish. Spread evenly across the base and up the sides of the dish. Put in the fridge and leave to set for at least 30 minutes. 2. Put the lemon juice and zest in a large bowl and stir in the condensed milk and double cream until thoroughly mixed. Pour onto the biscuit base and chill for several hours or until set. 3. Just before serving, decorate the tart with with the mint leaves etc and for the snappy bit, if you can get hold of some of that space dust that explodes in your mouth, sprinkle some of that on top! Plus you can make them in advance and freeze so you can just whip the cream and fill and make the chocolate sauce on the day - simples!! Sage Nope, no beating! just stir it all (lemon, condensed milk and cream) together in a bowl then tip it onto the base, takes a few minutes for it all to mix well but it does eventually.
