As Bessie hasn't been laying much recently I have had to rely on Betty to provide all our eggs. Lucky she laying practically every day. However, in spite of telling OH that I was saving eggs for baking at the weekend, he forgot of course and ate two of them Come Saturday, I got down to the baking and then I ran out of eggs Neither of the girls had laid that morning. I was determined not to have to go and buy eggs from the supermarket and luckily around lunchtime I went out to check the nest boxes and both girls had laid The thing is, this made me realise that I really do not want to ever have to go back to buying eggs from the supermarked again ever I just don't think I could - I would rather go without. We actually didn't use many eggs before we got hens but now I'm coming up with all sorts of uses - fresh egg pasta, meringues, caesar salad, ice cream, pancakes, egg fried rice, custard. Why is the taste so much nicer than even ther best FR eggs from super markets I think it is because the eggs our girls lay are never more than a couple of days old.. ..By the way you forgot to mention homemade Mayo..Yummy. Daphne Posted March 6, 2012 Share Posted March 6, 2012 As I only keep pure breeds, I have months go by in the winter without any eggs But I am very reluctant to buy any (bit daft really, I can get them from a FR smallholder a few minutes away!) and I only really make an exception when its time to make the Xmas cake/pud or a similar emergency Basically, we just don't eat things made with eggs when we don't have our own. But I would buy some in if I had children, elderly people or vegetarians to cook for regularly. You're right, I forgot to mention it - but I do make that too It's funny, but once we got the hens we have gone a bit 'good life', I try to make/grow lots of things at home now. I grew some veggies last year, planning more this year, plus I make a lot of my own dairy products now - butter, soured cream, even mozzarella & ricotta cheese. May try some more complicated cheeses one day. I made some jam last year too, though sadly not from our own fruit. Our strawb crop failed miserably but lesson learned - I'll get some bird netting around them this year I dream of a little smallholding with lovely veg beds, a dairy cow or two, and flocks of happy chooks everywhere Quote Link to comment Share on other sites More sharing options...
