After a bit of a rummage I found my school cookbook, Cooking Explained by Barbara Hammond.I think the recipe you are looking for is in the book as Welsh Cheesecakes .The instructions are a little vague, the book has a basic recipe then a chart for the variations, the Welsh Cheesecakes are a variation. Shortcrust pastry Jam 100g butter or margarine 100g caster sugar 2eggs 100g flour Half teaspoon baking powder Grated rind of half a lemon You need short crust pastry cut into rounds and put in a tartlet tray. Then put jam in each tartlet. The sponge is made by the creaming method. Then put dollops of sponge mix on top of the jam. Bake for 30 mins at 180oC. I love these! I made my mince pies last night. I always make my own pastry. My secret is to use Clover in a tub & self raising flour! 12oz self raising flour 6 & a half oz Clover 3 tablespoons cold water Once combined put in cling film in the fridge for 20 minutes before rolling out.
