Rhapsody Posted October 18, 2007 Share Posted October 18, 2007 I thought it might be a nice idea for everyone to contribute their fave simple fork-supper kinda pasta dishes as we are now officially in Comfort Food Season. Here's mine to start...... Rigatoni With Roasted Tomatoes I pkt cherry tomatoes Olive oil 1 Head garlic Salt and Pepper Finely sliced Chilli (optional) Fresh grated Parmesan Put tomatoes and garlic in ovenproof dish, drizzle with olive oil and sprinkle with salt and pepper and roast on low heat for about 45 mins. Squeeze garlic out of cloves and mash into tomatoes until they break up. Add chilli if using to taste. Add fresh Parmesan and mix in. Serve on cooked Rigatoni or similar robust pasta. Mix with cooked pasta. Done Anyone want Baked bean Lasagne recipe? Tina C Posted October 18, 2007 Share Posted October 18, 2007 OK you asked for it! Its sounds odd but it is tasty. Fry chopped onion in a little oil, throw in some sliced (or chopped if you prefer) mushrooms (we use at least 8oz) and cook a bit, stir in a tin of baked beans and a dash of tomato puree. That's your filling done. Make a cheese sauce and layer filling/sauce/sheets of lasagne in the usual way. Finish with lots of lovely grated cheese to make a crispy top. Cook for about 40 minutes. Voila! I did not invent this - I got it out of a veggie cook book back in my university years. It has been a intermittent favourite of me and mine for over 20 years. It was ressurrected about a year ago as an experiment in tempting the then 5 year old to eat mushrooms. It worked. Meat-eating men seem to like it too. So, Egluntine are you going to try it????? My favourite pasta meal is Garlic Mushroom Lasagne Fry lots of sliced mushrooms in batches in light olive oil and drain on kitchen paper. Gently fry garlic until golden, add the mushrooms back to the pan. Make a cheese sauce and layer the pasta, mushrooms and cheese sauce in the usual way and bake. Serve with green salad and baby tomatoes - rocket leaves go well with this. Not my favourite comfort food though - that's Cheese and Potato Pie with baked beans at the bottom (or chopped tomato if I'm being good!) Cinnamon Posted October 19, 2007 Share Posted October 19, 2007 Here is my summer garden pasta, which is good all year round Fry a pack of pancetta & 2 small cubed courgettes until golden & soft. Add a handful of cherry toms & fry until soft & juicy. add a couple od spoons of pesto, salt & pepper & serve over spaghetti - delicious! I love pasta A german friend of mine used to put left over pasta in a frying pan and pour on whisked egg and cook. So easy - just make a cheesey mash, add very, very finely chopped onion and spread it over baked beans (or chopped canned tomatoes) in an ovenproof dish. Stir fry some turkey or chicken breast, cut into strips (before frying!) and add to cooked tagliatelle with a pot of low fat philadelphia with garlic and herbs.
