Millionaires shortbread

Ingredients:

175g plain flour

125g butter, cut into small pieces

50g soft brown sugar, sieved

 

Topping:

4tbsp butter

50g soft brown sugar

400ml condensed milk

150g milk chocolate

 

Makes 12

 

Grease a 9inch square cake tin

Sieve flour into mixing bowl & rub in the butter with your fingers until it looks like fine breadcumbs. Add sugar & mix to a firm dough.

Press dough into the tin & prick all over with a fork.

Bake at 190 degrees C / 375 F / Gas 5 for 20 mins, or until lightly golden. Leave to cool in the tin.

 

To make the topping, place butter, sugar & condensed milk in a non stick pan & cook over gentle heat, constantly stirring until mixture comes to the boil.

Reduce heat & cook for 4 - 5 mins until caramel is pale golden & thick & comes away from sides of the pan. Pour over the shortbread & leave to cool.

When topping is firm, melt chocoalte & spread over. Leave to set then cut into squares or fingers.

Okay I made some last night and as usual it is not great :lol:

 

I think I overcooked the biscuit base :roll:

 

The caramel and chocolate is nice though :lol:

 

Not even I could get melting chocolate wrong :oops:

 

I may have another go at the weekend :?

 

One question though I had to buy Nestle Condensed milk as that was all the shop had is there another brand out there anywhere :evil:

Nestle have taken over Fussells. :?

 

Sainsburys do their own but I bet it's Nestle.

 

Found this recipe for making your own on 'tinterweb. Cant vouch for it though.

 

Ingredients (American Cup measures)

 

6 cup Whole milk

4½ cup Sugar

½ Vanilla bean

 

Method

 

Heat the milk and sugar in a heavy saucepan over medium-low heat with the vanilla bean, which has been split lengthwise, s"Ooops, word censored!"ed with the back edge of a knife and added to the milk--pod, seeds, and all. When the sugar is dissolved, raise the heat to medium-high and hold between a simmer and a boil, stirring occasionally, for about 1 hour. Be sure the milk doesn't stick to the bottom of the pan. The milk will thicken, turn beige, and darken to light tan. Strain into a bowl and cool. The "condensed" milk will have reduced to 4 1/2 cups. It will keep several weeks, covered, in the refrigerator. How to use your sweetened condensed milk: Use in equal amounts in recipes that call for canned sweetened condensed milk, particularly in baked custards. Try in hot coffee, in the Latin American tradition, or in iced coffee, in the Southeast Asian tradition. Use over fruits, as sauce, and in other desserts that call for sweetened condensed milk.

I will try looking in Galashiels Tesco at the weekend and Asda (which is over the road from Tesco both huge and 24hr :shock: ) I was in Sainsburys last night but it is a really small one so only has basics :roll:

 

Might check the Nestle list to see if they make it for these stores and failing that may have a go at making my own thanks for the recipe Egluntine :wink:

 

But only if my next attempt is better than the first as life is too short :lol:
