missuscluck
Our first batch of piggies (6 gloucester old spot) went to slaughter on Monday. They were collected from the slaughter house on Tuseday evening and taken to a farm butcher for cutting on Wednesday. Hubbie and the others in the Pig Syndicate spent Wednesday evening helping with the cutting up and arrived back to ours at about 10pm with a truck load of pork ready for the freezer. We sorted it all out in the garage as to who was getting what, and had some callers who wanted to buy some. The sausages were collected yesterday (in 4 flavours) and the bacon is due sometime next week. The pork is AMAZING. It looks great. We have tryed a chop and we all had sausages for tea this evening. We have one whole pig plus a bit in the freezer and it should keep us going for a long while, there is mountains of it! It is just such a satisfying feeling to think that we produced this. The butcher said that our efforts were commendable and the pork was really high quality. We are feeling very pleased with ourselves and are looking forward to doing it again next year. (need to eat some pork now, no room in the freezer)
Guest
a pig syndicate? How does that work then, sounds like a good idea- where were they reared?
missuscluck
it sound good a 'pig syndicate' like an international drugs ring or something The way it has worked for us is... 4 friends want to keep pigs We found a nice man with a patch of land behind the pub We have a pig ark, a feeder, a drinker and an electric fence We know someone who breeds pigs, go and buy 6 (ahhh, cute) Feed them for 4 months with a large amont of pig food and anything else thats going. Find a slaughter house and a kindly butcher Kill , chop and freeze. Oh and eat Not forgetting that the land has to be DEFRA regesterd and that you have to inform them of all movements. And that you MUST NOT get sentimental.
Guest
in theory sounds great but i am way too sentimental, do you need a silent partner for next time? How much does it cost for a share?
missuscluck
No, you have to wade in pig poo, get your bum bitten whenever they feel the need and go out all hours to attend to their fattening tummies

Snowy
Well done Lynda! Hope you enjoy it - it will be so much better than anything intensively reared! The best pork I ever tasted was a joint served up by my best friend, a farmers daughter. When I asked why it was so much tastier the answer was 'probably because it was trotting up and down the lane this time yesterday!'

Lesley
Well done Lynda! - the Pig Syndicate sounds like good fun We've just sent off this years pigs, we only started last year. We have two massive hams curing, one ready to air dry and a load of bacon which we need to sort today sometime. We've tried different breeds but now we will decide on a breed - or two - and stick to that. We sent a GOS boar earlier this year - he tasted superb! Happy eating
