Tina C Posted November 28, 2007 Share Posted November 28, 2007 I am a long-time veggie but I decided to post this partly to give me some new ideas and partly to help anyone who is catering for vegetarian guests this Christmas. There are going to be 12 of us round the table(s) this year -, including 3 veggie children and 3 veggie adults. OH is doing turkey, I am doing veggie option. Our guests are happy with Quorn, I am happy as long as I get roast parsnips and Layla is happy if she gets Yorkshire puds, but I want to do something a bit special. Any suggestions? Lesley Posted November 28, 2007 Share Posted November 28, 2007 I love Nut Roast - and you can all eat the same veggies as long as they're not cooked with meat juices. I hate all the magazine articles which seem to assume that Veggies need really weird food - all I want to do is replace the meat element!! - I don't want half raw peppers, and salad stuff, just roast veg, gravy (veggie), bread sauce, cranberry sauce, stuffing etc. and something to replace the meat. Yes, I always do a nut roast for veggie guests at Christmas, I use walnuts and hazelnuts in mine, but almonds sound good, might give it a go this year. Beauty-Box Posted November 28, 2007 Share Posted November 28, 2007 I found a recipe in prima (Dec) for a Cranberry, Chestnut and Sage roast which I thought I might try this christmas. I'm the only veggie in our house. You are so right Lesley, I love the same veg, Cranberry sauce, stuffing and veggie gravy. Just thinking about it all makes me feel hungry! Rhapsody Posted November 28, 2007 Share Posted November 28, 2007 When I were veggie I made a huge upside-down pie thing, cant remember wher I got the recipe, I'll root around for it for you, it was a layer of brioche dough smothered in bread sauce with mushrooms and nuts on top, then you made a larger lid to drape over the top and crimped it like a giant square pasty. I love nut roast too but we have one under 5 coming so not sure (I like chunky nut roast) - I believe there is the choking thing to consider. Also Layla is not too keen on nuts. It is now a regular feature of my Christmas dinner and if you add the layer of cranberry sauce as she suggests, it is definitely special. It's also quick and easy to prepare. missuscluck Posted October 23, 2008 Share Posted October 23, 2008 My hubby was a veggie for years. I always made Chestnut and sweet potato star for him. This is a double layerd pie affair made with puff pastry shaped like a star. The top layer is boiled sweet potato mashed with butter and cheese with some mustard and the bottom layer is chestnut puree (a whole tin) fried mushrooms, leeks and whole chestnuts with some herbs whizzed up in a food processor. You cut a star shape out of puff pastry and lay it on a baking sheet then pile on a layer of the chestnut mix then top with a layer of sweet potato mash, so you end up with a star shaped heap. Leave an edge to stick the top layer to. Brush the edge with egg. Then cut out a larger star shape to cover the whole thing sticking down to the bottom star. Cut some air holes it the top in a decorative way and brush with beaten egg. Bake on about 180 ish untill its a lovley golden colour and piping hot throughout. I used to bake this before christmas and then freeze it. It can be covered with foil and warmed through on the day or make both the layers up and freeze in seperate storage pots then defrost and put together on the day using packet puff pastry.
