Rhapsody Posted April 17, 2008 Share Posted April 17, 2008 Egg and Cress Sandwiches a la Rhapsody For 7- One loaf wholemeal, one loaf white bread 10 of your finest backyard eggs, boiled, cooled, chopped A good dollop mayonaise 2 tbsp melted butter 2 boxes cress Salt and Pepper Assembly instructions- Use one white and one brown slice bread for each sandwich. Combine all the other ingredients and spread fairly generously. Cut off crusts and give to chickens. Cut each sandwich diagonally into 4. Eat one yourself, its the only chance you will get. Arrange artistically on large plate, sprinkle with any leftover cress. Serve to your Hen Party guests, getting fingers out of the way quickly.
