Rhapsody Posted January 26, 2009 Share Posted January 26, 2009 This is a quick one-pot recipe that I nearly always have the ingredients for already. My younger son hoovers this up in a quite alarming manner! I use a large heavy non-stick pot with a lid for this. 1 Chicken Breast per person 1 whole Chorizo ring, or a good chunk bought from the deli (if you can only get sliced I would bung in at least 2 packets) 1 large red onion Bay leaf Half can chopped tomatoes 1 can Chick Peas Smoked paprika Seasoning #Chop your onion and soften in oil or butter, meanwhile cut your Chorizo up into cubes [note: remove skin] or quarter if sliced. Add to onion and stir occasionally. #Cube chicken and add to pan, stir around until the chicken browns. #Add bay leaf and a heaped tsp smoked paprika. # Pour in tomatoes, seasoning to taste, and half a cup of water. #Cover and cook for 20 mins. #Check seasoning and add chick peas. #Simmer for 2 minutes uncovered. Berkochicks Posted January 26, 2009 Share Posted January 26, 2009 Reminds me of Covent Garden Soup Company's Chorizo Casserole with chick peas and coriander 3 tbs olive oil 2lb chorizo 2 onions 2 garlic cloves 1 red chilli 1/3 pt dry white wine 14oz can tin toms 1/2 pt chicken stock 1 tds soy sauce 1 tbs worcester sauce 1 tbs tom puree 2 cans chick peas bunch coriander S&P fry onions garlic chorizo in big pan add everything but chick peas and coriander Cook for 25 mins add chick peas simmer 5 mins Add coriander as you serve We usually eat with nice crusty bread. chickencam Posted January 27, 2009 Share Posted January 27, 2009 We do something a bit similar with chicken and chorizo and rice all in one pot. Fry onion lightly add chicken we sometimes use cooked sometimes raw depending on what we have chunks of chorizo, and various other things that are lurking in the fridge, sun dried tomatoes, olives, courgettes in summer, and some paprika. add rice and enough stock to cook the rice by the absorbsion method, bung the whole lot in the oven or cook very gently on the hob.
