Will be doing a roast dinner (not quite sure what meat yet) but one of the guests is a veggie. What could I serve that would go with the roast dinner trimmings, ie roast potatoes and yorkshire puds?? chelsea Posted November 5, 2006 Share Posted November 5, 2006 from a vegetarian point of view..be careful of the gravy...I wouldnt want to eat "beef" gravy you have served for the others and as a vegetarian sat eating a roast at a friends house I would be thinking " I wonder if this is meat gravy" !! Penny Posted November 5, 2006 Share Posted November 5, 2006 Hiya - here's something you can put in the oven with the Yorkshire Puddings. Make a nice saute of wild mushrooms (lots around at this time of year); to do this, chop and sweat some shallots and some finely chopped tarragon in a little olive oil; add the chopped mushrooms and fry briefly then deglaze your pan with some Marsala or sweetish sherry; let it all bubble up a bit then slosh in some double cream, give it a stir, some Maldon salt and pepper and set it to one side. Now get one of those packs of ready rolled puff pastry and open it up. Cut it into two equal pieces across its shorter length. Now cut one of the two pieces in half again and put aside the remaining larger piece (you can freeze it) and turn your attention to the two smaller pieces, which are each one quarter of the size of the whole sheet. Take your knife and draw a line about 1cm inside the edge of one of the pieces. Now glaze them both with an egg wash. put them on a baking tray and whack em in the oven for 20' or so with your Yorkshire Puds. They'll puff up and the scored one will form a box whilst the other is your lid. Put a drop of your veg boiling liquid into your mushroom mix to loosen it again and bring it up to sizzling hot, then spoon it into your puff pastry box and put the lid on at a jaunty angle. I struggle to find many dishes that can be eaten with roast dinner veggies & gravy so am very happy to have a Quorn fillet or 2 as it goes really well. red Posted November 5, 2006 Share Posted November 5, 2006 Us vegetarians aren't as tricky as we may seem (though you are probably thinking differently having started to read our replies! ) - I think you are doing the right thing trying to come up with something you can serve with the rest of the roast - it can sometimes make you feel a bit of a grapefruit sitting there eating something radically different to everyone else. So you are on the right lines. However I would be inclined to find out if they prefer to have something made of vegetable or if they olike meat replacements - personally I'm not that keen on Quorn fillets/pretend meaty things - just a matter of personal taste - in fact I'm quite happy having a roast without the meat and just having everything else. Some vegetarians like meat replacements and others dont so if I were you I'd give your friend a quick call and ask them what they would prefer. If you dont know them well enough or they are a guest of a friend why not give a mutual friend a call - do you know anyone else who has cooked for them? I'm sure whatever you do it will be lovely. Normally she just eats the same as everyone else but avoids the meat bit like you suggested, that's why I wanted to do something a bit more special for her. I like the sound of the yorkshire pud with roast veggies topped with stuffing - might try doing that for everyone, any further details on that recipe anyone?? kazaddress Posted November 5, 2006 Share Posted November 5, 2006 I would blend some bread crumbs, apple, butter, sage and onion together. roast some butter nut squash, parsnip, and peppers. fill the yourkshire.. then top with the stuffing Have a lot of vegetaria friends.. another favourate is roasted butternut squash, red pepper and goats cheese tarts.. in fact 3 weeks ago I had a vegetarian week... and posted my meal plans under the "health eating" section on the nesting box! That really is something to aim for - the trouble is, with 4 menfolk to feed, I only just have enough room to prepare their daily food, let alone enough for a week. (In fact Quorn makes me really really ill!!) I'd much rather have a traditional roast meal with all the trimmings, minus meat plus a bit of vegetarian gravy!! It is really quick and easy to make and absolutely delicious. Serve with an onion sauce or similar to fit in well with the roast everything else. Cranberry and orange sauce is excellent too. Snowy Posted November 12, 2006 Author Share Posted November 12, 2006 Update. Friends came for lunch today - although I say so myself, a resounding success! Did roast chicken (couldn't get free range, but this was from a local barn producer), mashed potato with celeriac, roasted veggies (beetroot, carrots, parsnips, celery, red onions), roast pots, small yorkshire puddings filled with stuffing, large flat mushrooms stuffed with St Agur cheese, gravy - followed by apple and banana crumble with custard. Sounds like a lot but there were 10 of us including kids! Whew, dishwasher's loaded, time to put my feet up with a small glass of something methinks! Many thanks to everyone for the inspiration!
