From Covent Garden Soup For All Seasons Book which is our latest charity shop cookbook find. Courgette and Tarragon soup:- serves 4 25g/1oz butter 4 medium courgettes chunked 1.5 tablespoons of chopped tarragon dried or fresh ( I used Fresh because I have loads in the garden but the recipe says that it is just as good with dried) 300ml (10.5floz) veg stock 300ml (10.5floz) milk salt and pepper. I added a chopped onion too because I think soup needs an onion Melt the butter and gently fry the onion for a few minutes then add the courgette and fry gently for about 5 more minutes Add the tarragon and cook for a further 5 minutes without browning. Add stock, it should be enough to just cover the courgettes then bring to the boil and cover and simmer for about 15 minutes until the courgettes are tender. Add milk and blend until smooth, reheat gently without boiling. It makes a lovely pale green speckled soup and it tastes lovely, a great use for loads of courgettes. Thanks to 2 batches of this and chocolate courgette muffins today I am down to 2 courgettes in my fridge. LesleyH Posted August 31, 2009 Share Posted August 31, 2009 Well I have just made this - with the substitution of a sprinkle of dried thyme and it was absolutely delicious...even fussy-soon-to-be-teenager step daughter loved it! success - thank you for saving my excess courgettes from being wasted (I actually bought too many from the stupid market in error thinking I did not have any - cannot claim to have a glut that I have grown myself!!! It's so silky it seems like it has cream in it, even though it was only milk. If they become marrow like with hard skin I guess you can just peel the skin off them and use them. I have serious problems with frozen courgettes and their mushy flesh so much so that even the thought of them brings me out in goosebumps! chickencam Posted July 23, 2010 Author Share Posted July 23, 2010 I froze quite a few pots of this soup last year and it was fine, the tarragon doesn't perhaps taste so fresh and becomes more dominant, so may be add less or add it after defrosting, but otherwise it was fine. I have to say I was amazed at how sophisticated the flavour of this was, it only has a few simple ingredients, but is delicious. I posted it originally because I was so surprised by it.
