Help! I've hit the wall of vegginess!

I've been veggie for over 20years and it goes in waves of running out of inspiration.... At the moment I've completely hit the wall, I'm fed up of eating the same stuff over and over...

 

So was wondering what other veggies out there love to eat on a daily basis......

My ED (12) became a veggie a week ago. Its been quite interesting for us as we have actually, after many years of saying it, stopped having meat at every main meal. I haven't quite got into the mindset of checking everything I buy is suitable for veggies (if I am intending her to eat it) :oops: . But I have been cooking veg soup, falafel, tom sauce and pasta (instead of meatballs on spaghetti) (not the biggest hit), spicy beanburgers vv yum, Quorn for chilli non carne and curry, broccoli and cauli cheesy bake, potatoes dauphinoise. My ED isn't a complete veggie though as she is still eating fish. She couldn't quite give up salmon as its her fave thing in the whole world.

 

One thing I have wondered about is cheddar cheese. In Sainsburys it says the mature cheddar is vegetarian. How do they make cheese, en mass, that is veggie? I thought you could only buy it in small amounts for lots of money.

 

But, back to your original post, I haven't really got any ideas yet, but as I say, I'm just starting. Maybe try different spices, herbs to change the flavour. Or do various crumble type toppings on savoury stuff. Oooh, just remembered something. My SIL has a Jamie Oliver cook book in which he does a spicy roasted butternut squash. I'll have a look for it if you like? I'll be looking out for things for me to cook for us so if I find anything interesting, I'll let you know.

One thing I have wondered about is cheddar cheese. In Sainsburys it says the mature cheddar is vegetarian. How do they make cheese, en mass, that is veggie? I thought you could only buy it in small amounts for lots of money.

 

Most cheese these days is made using veggie rennet as it is cheaper than the animal version - but producers don't always put it on the label in case it puts people off :roll: You'll find it fairly easy to find veggie cheeses, especially cheddar.

 

I hope you'll allow me in this thread???? - I still consider myself vegetarian (since 1980) although I do now eat meat we've raised ourselves......

 

I used to go through phases of eating the same old things and becoming bored with it all - I found a read of a few good veggie books from the library always helped. People who do veg boxes often have recipes on their site (Abel&Cole?) and there used to be a couple of veggie food magazines? - I don't know if they're still available. Te$co used to produce one.

I'm almost the same as Lesley in that I've been veggie for 30 yrs (but with a couple of short meat eating periods in my twenties) in that I now eat our own chicken and I occasionally eat something that hubby has shot or caught (pigeon or fish mainly).

 

I'm a tough veggie to please though because I don't like too much tomato in anything and I'm not fond of nuts. And don't get me started on Quorn or meat substitutes :vom:

 

I eat a lot of roasted vegetables (peppers, onions, mushrooms, spuds etc etc) with goats cheese and I still make a lot of the type of food I used to love, such as chili and pasta, with tons of veggies (usually my favourite peppers, onions, mushrooms, spuds etc) and then I top them with lots of grated cheese. And I love sour cream and chives on my chili. I do the same with curries too, I usually cheat and buy an M&S tarka dahl, then soften a load of my favourite veggies in a little oil and add garam masala and chili powder, then stir in the lentil sauce and a bit of yoghurt. And with pizzas I add, yes you guessed it, peppers, onions, mushrooms and some nice tasty cheese to top it off. I love my roast dinners too - everything but the meat and gravy but with loads of bread sauce. And then there's eggs :D

 

My cheats are to use a good pasta sauce as a base - Cottage Delight tomato & basil is great - and I raid M&S for veggie meals for one and basic pizzas when they have deals on. They have a great range for when I'm feeling lazy, I just get one out of the freezer and stick a jacket spud in the oven .... then pour the wine and wait lol.

Veggie daughter here too - it will be a year this Christmas.

 

I try really,really hard to make her whatever we are having,but adapt it to suit her diet,& use quite a lot of Quorn mince & Quorn chicken bits too.

 

So tonight we are having Curried Chicken Pilau, & Cleo will have the same,but with Quorn chicken bits.

 

As a family,we now eat veggie a few times a week too.Last night we had home made cream of tomato soup & garlic ciabatta,tomorrow its a mixed veg Rissotto.

 

I have 8 lovely files of recipes in my office & the Veggie file is now the fullest.I pull recipes from magazines,try them & if they are good,they get filed.

 

I get 'Good Food' regularly & ofen pick up their Veggie mag too, which is very good.

 

Some family favourites are:

 

Parsai eggs (have posted it here)

Mexican Eggs (Ditto)

Jamies Pasta,tomato & Mozzerella bake

Fried Halloumi salad

Spaghetti Giardino (posted)

Minestrone soup

Thai sweet potato & coconut soup (posted)

Pasta with broccoli,bacon & parmesan (omitting the bacon for Cleo)

Mac & Cheese bake

Rissottos,depending on what veg we have in the garden/fridge

Quiches

Sweet & Sour with eggy fried rice (Cleo just has the rice & S&S sauce)

Curried Eggs

Curried potato pasties

Sweetcorn fritters (ours with bacon,hers with veggie sausages)

I have this one, i've never done any of the recipes out of it, but they look quite nice. You're more than welcome to the book if you'd like it as it's in my pile ready for the charity shop :)
