Oven baked Gnocchi- Easy supper dish

A family favourite in this house and great comfort food. Adjust the specific ingredients according to whats in the fridge..

 

1 pkt fresh Gnocchi per 2 people

Fresh tomatoes, chopped into chunks

A nice big piece of Chorizo or Pepperoni, cubed

Garlic

Fresh Parmesan

Cheddar, grated

Mozzarella, torn into pieces

 

Fry off the Chorizo or Pepperoni in a little oil, add chopped garlic to taste and tomatoes, cook for a few minutes.Season.

Oil an ovenproof pan and put Gnocchi straight in, followed by the Chorizo and tomato mixture and the cheese, season and bake for 25 mins, and serve with a green salad.

 

ETA: Quantities previously listed suitable only for marathon runners..

Question about Gnocchi

 

I have only had it once,many years ago, & found it really heavy going :?

Did I cook it wrong (boiled,I think), or is that how it is?

I like the idea of it,but was disappointed with it & have never tried it again - this recipe may change that though as it sounds delish.

I've only made potato/potato spinach gnocchi in the past but must admit I havent bothered for a while. You only cook them until they rise to the top of the pot or they go 'orrible

Glad so many like the dish and it is very customisable depending on what is in the fridge!

I like the idea of it,but was disappointed with it & have never tried it again - this recipe may change that though as it sounds delish.

 

I hadn't enjoyed my attempts previously either and I had boiled it until it rose to the top of the pan. With this recipe it is baked straight from the packet (I didn't home make it) and it is lovely. It needs a reasonable amount of sauce, I have made it twice now. :drool:

This is in the oven now - super easy to throw together,so I hope its as nice as it promises to be :)

I have also made a veggie version in a dinky little dish I picked up in John Lewis today,for the veggie daughter,& she is a real fusspot,so I will report back 8):lol:

 

EDIT: Good reports all round,although next time we will use the sauce with cooked pasta & bake it in the oven.Not too keen on the Gnocchi :?

yes I thought it would go just as good as a pasta bake.

We have tried this. Love it. Never had gnocchi before. 3 yes's and a not sure from my son who said he would prefer pasta. My daughter however said it would go firmly on her list of favourites.

Easy to cook. We used canned toms to make it more saucy :D and chucked in a few other stray fridge leftovers in (mushrooms/ham)
