I have a rather fussy hubby and I dont want to do a roast! anysuggestions?? oo forgot to mention I am also working this afternoon and have 3 extra kids in my care (childminder) so it needs relatively a slef cook type requirment... kinsk Posted April 8, 2010 Share Posted April 8, 2010 Pasta bakes are great - boil some penne, dry fry some diced pancetta and some sliced leeks. Mix it all together with cheese sauce (there are some decent tubs of cheese sauce now) put in an oven proof dish, top with slices of mozarella and greated parmesan. It can sit and wait until you want to put it in the oven, serve with garlic bread and salad. Brown some chicken thighs, lob in some cubed potatoes, chunks of tomato, onion and lemon, sprinkle over some smoked paprika, salt and pepper, pour in a little stock and bake in the oven. Can do similar with sausages too. Cheats fish pie - mix some fish with a tub of creme fraiche, chopped herbs and spring onion, top with mash and bake.
