BeckyBoo Posted April 18, 2010 Share Posted April 18, 2010 OK, so I want to cook a meal for someone special, not a veggie or anything but he is diabetic (which I assume from what he's said and other things I've seen him eat is only going to affect the pudding side of things!) It's a very long time since I cooked anything apart from fish fingers for anyone else and whereas before I could have come up with something at the drop of a hat, my mind seems to have gone completely blank!! Something not too expensive to make, that won't tie me to the kitchen all evening, but will make him go "WOW!" - so, don't want much then do I? Olly Posted April 19, 2010 Share Posted April 19, 2010 One-pot or casserole meals are always good, as you can prepare ahead (room for mistakes, as well as not being tied to the kitchen!) I've made this many times, and it's brilliantly simple: Oven baked chicken Thai rice 1 tbsp vegetable oil 1 onion, chopped 400g packet mini chicken fillets (free range, of course!) 4 tsp green curry paste (Barts or similar) 250g basmati/wild rice mix, rinsed (Tilda do one) 2 red peppers, deseeded and cut into wedges finely grated zest and juice of one lime 400g can of reduced-fat coconut milk handful of coriander leaves heat the oven to 200/fan 180/gas 6. Heat the oil in an ovenproof casserole dish, then soften the onion for five minutes. Add the chicken and curry paste, stirring to coat, then cook for three minutes. Tip in the rice and peppers, then stir in the lime zest and juice, coconut milk and 250 ml boiling water. Bring to the boil, then put the lid on and stick in the oven for 20 mins until the rice is fluffy. Scatter with coriander leaves before serving. Works well with quorn for vegetarians, you can prepare all the stuff ahead and even soften the onion and coat the chicken in curry paste etc, then just boil it up, pop it in the oven and enjoy a nice glass of wine while you wait for it to be ready. ladyjulian Posted April 19, 2010 Share Posted April 19, 2010 My dinner party staple for times when I want to impress but not spend all day in the kitchen is Thai Green Curry: Fry a chopped onion. Add diced chicken (if meat eating), brown the meat, and then a tablespoon of thai green curry paste. Fry for a minute and then add chopped veg - I usually use green peppers and finely julienned carrots. Add a tin of coconut milk and simmer for half an hour. Towards the end of cooking add the quick veg: pak choi, sweetcorn or butter beans, frozen peas, courgette - anything like that works well. Add a handful of cashew nuts just before taking it off the heat. Serve with fragrant rice, and decorate the curry with a sprig of coriander and a lime quarter. It reheats well so you can make it in advance. I also quite like making homemade sushi rolls to have with a drink before the curry: again, you can make them way in advance so all you need to do is take them out of the fridge and slice them, arrange decoratively on a plate with a squidge of wasabi paste in the middle, and nibble over a drink before serving curry. Guest Posted April 19, 2010 Share Posted April 19, 2010 lamb tagine with cous cous (if you're still veggie then replace the lamb with some chick peas or some sort of vegetable) 500g boneless lamb shoulder 1 medium onion cple of sweet red peppers sliced tin chopped tomatoes 2 tsp harissa paste 2-3 cloves garlic or a cple tsps of garlic powder/salt 1tbsp ras al hanout (if you don't have any then use 1tsp ground cumin 1tsp ground coriander 1tsp ground cinnamon but if you can, try and use the real thing as it makes a big difference) handful of chopped dried apricots handful flaked almonds brown the lamb, add the onion fry til soft then just add everything else and leave to simmer on a low heat for a cple of hours. When you tip the chopped toms in, fill the empty tin with water and add that too. I first had it at my friends' house and I was wowed at how delish it was! i asked for the recipe and couldn't believe how deceptively easy it was! you don't need me to tell you how to do cous cous diabetic ice cream for pud, to cool the palate! BeckyBoo Posted April 19, 2010 Author Share Posted April 19, 2010 Well now, which to choose, never had lamb tagine, am in the process of doing the online shop and have added a free range shoulder of lamb and they had both other ingredients, so that's a definite maybe, but then the sausages sound good......and weirdly I don't seem to be able to eatThai curry. There's an ingredient that I haven't worked out yet which seems to give me a headache which is AWFUL as I LOVE the taste If I don't do the lamb on the night I will def give it a try anyway as it always sounds a lovely dish. have to sound him out for spicy food.... chickencam Posted April 26, 2010 Share Posted April 26, 2010 We did the seafood rissotto on Friday night and it got mixed reviews. OH loved it, he loves seafood, ED and YD ate it and said it was ok as did I but DS really didn't like it. It was way too fishy for me, the fish soup that you use for the liquid is very strong. We have decided though to have a go at Delia's recipe of the week from Waitrose each Friday while they are on, to save the whole deciding what to have for tea thing.
