I've just made this for a MacMillan coffee morning tomorrow. Never fails, and a great way to use up any odds and ends of dried fruit. chickencam Posted October 3, 2016 Author Share Posted October 3, 2016 Time goes by so quickly I haven't made one for ages, it is my son's favourite cake and I didn't even make it when he was home over the summer. I did send him one for his birthday though. I have found one nearly as good which is made with dark porter ale and has flaked almonds on the top. soapdragon Posted April 17, 2017 Share Posted April 17, 2017 Made this AGAIN yesterday but put in 4oz muscovado sugar rather than 6 oz caster and, as a seasonal extra, lemon zest (unwaxed lemon) and half orange juice/water (plus extra nutmeg, as usual)! Put half the mixture in the tin then a layer of marzipan and the rest of the mixture as a sort of simnel cake. Oh yum! The perfect fruit cake! I haven't made this cake for over 6 months since my OH was diagnosed with diabetes.
