Cinnamon Posted April 14, 2007 Share Posted April 14, 2007 I made this for Brian & myself last night & it was really nice LIVER & RED PEPPER STIR FRY Heat 1 tbs of oil in a frying pan & fry 225g strips of Lambs Liver for 3 mins until light brown. Remove to a plate & retain the juices in the pan. Add 1/2 tbs oil to the juices & add 1 Sliced leek, 1 finely chopped Red Pepper & 1 Deseeded & Sliced red Chilli. Stir Fry for 2 mins. Add 1tsp Oregano,1 Crushed Clove of Garlic & 100g finely chopped Spring Greens,& Stir Fry for 1 minute more. Return the Liver to the pan & toss with the Rind of 1 Orange plus 2 tbsp Juice, & 2 tbsp of Dry Sherry. Season & Serve Quote Link to comment Share on other sites More sharing options...

The Dogmother Posted April 15, 2007 Share Posted April 15, 2007 I love liver, and used to cook a gorgeous dish when I lived in Tunisia. Roughly, speaking from memory..... Saute onions and garlic until browned, add a tin of chopped tomatoes and 2 tbspns of tomato puree. Add a teaspoom of dried cumin and one of dried, gorund coriander seeds. Season and add a teaspoon of Harissa (north African type of chilli paste, now available in supermarkets). Bung in some liver cut into strips and a dessert spoon of sugar. Cook until tneder, serve with eirher rice or couscous and garnish with chopped, fresh coriander. Just typing this makes me want some.... My Mum used to cut it into thin strips and fry it with green peppers When it went cold you couldn't tell the liver from the peppers as it all went green. It makes me feel just thinking about it! I have an abiding horror of all those tubes and pipes.......shudder! Offal....Yuk!! Him Indoors loves a plate of cold tripe and vinegar. I sometimes wonder what I saw in him!!
