You mean the pork pies with quail eggs? Now that's an excuse to get some quail! Hmm. Hubby fancies some of those pies! I still want to make a croque em bouche (spelling) , but for what occassion? Both our birthdays have just gone & think it's just us 2 for Xmas. Could we devour a whole profiterole stack? :think:

I think if you say 'practiced' a small, 2 person croquembouche, you could get the technique down, ready to enlarge it for a special occasion!

It's actually really easy to make using my Silverwood Battenburg tin. I also have a silicone mat that I rolled the marzipan out on - non stick & helped me to ease it round the cake. The cake lasts incredibly well too. Had a piece this afternoon, still as good as the day I made it, must be the marzipan preserving it a bit.
