Emma.x I think if you say 'practiced' a small, 2 person croquembouche, you could get the technique down, ready to enlarge it for a special occasion! I also have a silicone mat that I rolled the marzipan out on - non stick & helped me to ease it round the cake. The cake lasts incredibly well too.
