Pastry grrr.

I can't make it, but my OH can, he just bungs the flour and fat into the Kenwood Chef mixes it a bit gets magic breadcrumbs adds some water and heypresto. I tried it today, my pastry on my first batch of mince pies for the season is like dust. I obviously didn't use enough water, it held together at the going in the fridge stage and just about rolled out, but the pies are like eating mincemeat encased in dust and it was a waste of my lovely homemade mincemeat. We will eat them but it will have to be with custard :(

I use all butter, egg yolk and water and a tablespoon of caster sugar - a recipe I found years ago and works every time

 

8oz plain flour

5oz butter

 

Rub these together then add a tablespoon of caster sugar

 

Add an egg yolk and 3/4 tablespoons of cold water

 

Chill for 30 mins in cling film and make the mince pies - brush with the egg white and sprinkle with a little more caster sugar - gives a lovely crunchy top

 

A yummy, rich, buttery, crunchy, calorific delight

I use half butter, half Trex for my mince pie pastry. It's good done in a food processor. Very short!

I had forgotten about Trex my Mum always used that in her pastry.

 

I follow Delia Smith's mince pie recipe and use my own mincemeat, seems to work but I tend to make it by hand as in the machine I have a habit of over working it :oops:
