clucker1 Posted November 30, 2012 Share Posted November 30, 2012 Can I prepare a pizza from scratch and leave it in the fridge for a few hours/overnight before I cook it with good results. IE can I make the dough (in bread machine) roll out, cover and top pizza and leave it as you find the ones you buy in the supermarket? I have only ever made a pizza and then immediately cooked it. kinsk Posted November 30, 2012 Share Posted November 30, 2012 I've prep'd the dough a day before, wrapped up and stored in the fridge then rolled out and topped the next day. I really don't see any reason why you couldn't do the whole thing and chill it. I know a friend makes a job lot of dough, rolls out into about 10 pizza's and freezes the dough, tops and bakes from frozen. Might be better if you could pre-cook the bases slightly and then assemble chill and cook properly later? A bit like blind baking pastry i suppose. patsylabrador Posted November 30, 2012 Share Posted November 30, 2012 I always do what rachel19 has suggested. Very lightly bake the bases so that they have a slight crust and then store.
