redbug
Just wondering if anyone heard of these. My dad always called them these when I was a child. It is an fried/poached egg in between 2 slices of bread/toast. click My dad has been deceased for years but just could't get the thought/words out of my head. The mind works strangely. So had one for breakfast. Was thinking if it was something he used, none of my friends call egg sandwich a egg banjo. Lavenders_Blue
I love a fried egg sandwich, but have never heard it called an egg banjo before. I agree that the runniness of the yolk is crucial
CatieB
OMG we have egg banjo's in our house. I thought it was something that DH had made up.
Patricia W
My dad called them that too. He died in 1978. I think he learned to make them when he was in the army just after WW2. He also liked to make corned beef fritters or even spam fritters!

Chickendoodle
My OH uses it too - just looked it up and the name was coined by soldiers in WW2 as the act of trying to wipe off the yolk running down your shirt looked like you were playing a banjo
