Vegetarian recipes

Two favorites in our house:

 

Greek Beans

 

 

Serves 4

 

 

2tbsp Olive Oil

1 onion finely chopped

2 garlic cloves crushed

400g can chopped tomatoes

1 tbsp tomato puree

2 tbsp chopped fresh flatleaf parsley

2 bay leaves

½ tsp paprika

2 tbsp finely chopped dill

1 tbsp caster sugar

2 cans butter beans

 

 

Heat the oil in a frying pan over a medium heat and fry the onion for 5 minutes, until soft but not browned. Add the garlic, chopped tomatoes, tomato puree, parsley, bay leaves, paprika, half he dill and the sugar, along with 250 ml water. Simmer over a low heat, partially covered for 20 minutes or until thickened. Add the beans and simmer gently for a further 10 minutes. Drizzle with a little extra olive oil and scatter with the remaining dill.

Sausage & bean bake

 

Serves 3

 

1 pack veggies sausages ( Cauldron ones are the best)

1 can butterbeans

a small butternut squash

jar spicy pasta sauce

 

and for the topping a mix of breadcrumbs, chopped parsley and parmesan ( or any other grated cheese)

 

Peel & chop the squash, boil until soft but not mushy. Put the sausages, drained butterbeans & cooked squash in an oven proof dish, pour the sauce over. Top with the breadcrumbs,cheese & parsley. Bake in oven for about 20 min @180oC. Serve with green salad.

One that is easy to rustle up

 

"Tea with no name" (don't ask it's a long story!!)

for 4

four med spuds washed and sliced into 1cm thick slices

2 tins of baked beans

one med pot cottage cheese

(all amounts can be varied to taste ans appetites)

mix the lot together in a shallow baking dish, lasagne style dish, cover with foil and pop in a med/high oven till potatoes are soft, roughly an hour depending on your oven and how deep the spuds are. Can be served on it's own, with a dark leafy veg or with veggie sausages etc.

not haute cusine but good comfort food.

Roasted red peppers on pasta with parmesan

Bolognese made with brown lentils instead of mince

Homity pie

Fried polenta cubes with homemade pasta sauce, baked in the oven with mozzarella

Halloumi, sliced and grilled and stuffed in a pitta bread with hoummus

Roasted veg couscous with chick peas.

I once managed a Vegetarian Day Nursery the kids loved-

 

Taco shells with Chilli beans, served with shredded lettuce, chopped toms'grated cheese, sour cream, guacamole etc

 

Ratatouille cheese pie- make a really rich thick ratatouille put in a casserole dish added some big chunks of cheese. For the topping you use wholemeal bread dough that has been rising for an hour. Stretch out the dough and place on top. Bake until the bread is cooked.

quiche is very versatile, you can add all sorts of things to the basic egg/milk/cream mixture. I just made some with sauteed peppers and spring onions. You already have the yummy eggs to hand :D

Hi as a vegetarian for over 25 years I can heartily recommend the Moosewood books as a great inspiration.

 

Also I really love Rose Elliot recipes (she's a vegetarian Delia...her recipes always work). I also have a very old copy of the Food for Thought cookbook, (not sure if it is still in print) but that's very useful and used a lot. Quite a lot of veggie recipes rely heavily on cheese and I'm not convinced that they are that healthy. My husband isn't vegan but hates cooked cheese of any description, and it really is quite easy to provide good veggie meals without cheese. Non veggies seem to believe that all vegetarians eat Aubergine and Goat's Cheese. (we don't).

 

I absolutely agree that Cauldron veggie sausages are about the best, and they are made with Tofu which is good. Tofu is lovely but it does need a bit of tlc to enjoy at its best. We prefer the beech smoked stuff, sliced quite thinly and marinated in soy sauce with ginger and garlic, and perhaps a finger chilli for a couple of hours. Shallow fry until golden. Throw the marinade into to your favourite stir fried veg towards the end of the vegetable cooking time and stir around for a couple of minutes and dress with some extra toasted sesame oil before serving with noodles or rice.

 

Generally I avoid meat substitute stuff, as I don't eat meat cos I don't like the taste of it and never have (sorry..wish I could say it's a conscience thing), but my kids (one of which is veggie the other is not) really like the Quorn Southern Fried burgers for an occasional speedy meal, (only available in the frozen cabinet at Sainsbugs in our neck of the woods).

 

Oh, and don't forget to try the vegetarian society's website...there are loads of veggie recipes on there!
