Sausages braised in cider

 

6 pork sausages (I used local free range plain pork ones)

1tbspn olive oil

4 rashers of bacon cut into cubes (local again and same farm as the sausages)

225g small button onions, peeled

1 heaped tsp plain flour

275ml dry cider (I used a local brew by Hogan's Cider brewed by our mate Alan Hogan)

1 clove f garlic, crushed

1 bayleaf

A few sprigs of thyme

seasoning

To garnish:

1 Cox's apples, cored and cut into rings (no need to peel it)

A little butter

 

Pre-heat the oven to 180c/gas 4. Take a large flameproof casserole and heat the oil in it ansd brown the sausages all round. The, using a slotted spoon, remove them to a plate while you brown the bacon cubes and onions lightly. When they are done, sprinkle in the flour to soak up the juices, then gradually stir in the cider.

 

Now pop the sausages back in, plus the garlic, bayleaf and thyme and a little seasoning; put a lid on when it all comes to simmering point and then transfer to the oven for 30 minutes. Whe the 30 minutes is up, remove the lid and cook for a further 20-30 minutes.

 

Before serving, fry the apple rings in butter until soft, and garnish the casserole with them.

 

This cost me under a tenner and will serve Phil and I for lunch 3 or 4 times.

 

I QCed this last night and it tasted as good as it smelled - really easy and relatively quick to make too.

Yummy, all i need is bacon. I feel a trip to the village butchers coming up, I've got pork and apple sausages in the fridge (if my 5 year old can live without them for tea tonight!!!)

 

I cant wait for tea today!!!

 

Claret, you are all seeing all knowing on 'nice things' - what's the best base cookie recipe, i'd love to fine one that is consistently good that i can add things too... ie raisins and oats or chock chips etc...pretty please :angel:

:oops: too kind, it took almost no time to make. You could chop the sausages up into chunks too if you prefer it like that.

 

I've got a good basic recipe for cookies that I use as a base for my home made hob"Ooops, word censored!"s - if you go to my blog (www in profile) and click on the recipes tab, there are loads of recipes and the hob"Ooops, word censored!"s one is there somewhere.

 

I *think* that my flapjack recipe is there too - great for healthy school lunch box treats; I make it with omega seeds and dried fruit... yumptious!

Hi

Am cooking this tonight in my slow cooker for tomoorrow. Just added some sliced mushrooms to the onions etc. Has any one frozen this? does it freeze well?

 

I did think of trying to make a vegetarian version as DD doesnt eat pork and is half vegetarian. Using cauldron sausages and leaving out the bacon perhaps adding mushrooms and using a stock cube?

I may do that version tomorrow!

 

any way I think a good recipe!

Made this last night for Chris and the MIL and it was absolutely gorgeous - they both raved about it.

 

Will definitely add it to my list of things to make again and will be interested to see how it turns out in henny penny's slow cooker as that will make it even easier next time!
