I've finally got round to filing all my torn out recipes - years worth!!

 

I found this recipe and gave it a try - really quick and easy.

 

Quickie Bickies

Makes 40 biscuits

 

4 oz soft butter

2oz castor sugar

1oz ground almonds

4oz plain flour

Almond essence

Flaked almonds or demerara sugar

 

Grease a large baking sheet - turn oven on to 180C

 

Mix all ingredients in a processor until it forms a ball of softish dough.

 

Break off small pieces the size of a small walnut.

 

Place on baking sheet with enough room to spread slightly.

 

Flatten slightly with a fork and sprinkle with flaked almonds or demerara sugar.

 

Bake for 10-15 mins until light and golden.

 

Cool biscuits on a wire tray.

 

 

You can leave out the almonds and add another ounce of flour or cocoa and exchange the almond essence for vanilla.

They sound good and easy too :D

 

My OH loves biscuits but would rather have home made ones, so I am trying to perfect my biscuit skills. I find cooking them until crisp throughout really hard, although he likes them soft in the middle.

 

I have made snickerdoodles and walnut cookies today neither of which were as good as they should have been. After extensive quality control I have discovered that I put too much salt in the snickerdoodles and not enough cinnamon on the outside and I cut the cookies too thin so although they taste lovely they are really fragile :roll:

well I don't know what the biccies taste like (got another 8 minutes!) but the dough is pretty nice! Making some for the smallies - they're on the sofa, wrapped ina uvet, leaning on pillows watching a film as a Friday night treat, thought I'd try these out on them. Didn't make 40 though, think I must have made my biccies too big!

(can you actually MAKE them too big? :lol: )

No, they did not :shock: Because they were not custart creams, pinky whites or chocolate chip cookies :roll: I put half the dough in the fridge as it made quite a few so might grace the next load with chocolate chips.

So poor old me, have just had to have the last two with a cup of tea! :oops::lol:

:lol::lol: - I'm so glad you tested them for your littlies :lol:

 

I made some yesterday with the 1oz of cocoa and some tiny choc chips - thay were very chocolatey!!!! I think I'll use half the amount of cocoa next time - and adjust the flour.

 

They tasted like Bourbon biscuits 8) - I love Bourbons!

Just went to make some and have no plain flour :( , seem to have bought LOADS of SR though! Can't be bothered to go out in the ice and get some - they will have to wait.

I have to admit that the recipe did say SR flour :oops: - I only have plain flour and I forgot to add any BP. They were lovely so I wrote it out as plain flour - you could try the SR flour.

 

I've just made some cinnamon ones - 2 tsp of cinnamon added to the original recipe and I mixed some cinnamon with sugar and as I rolled the balls of dough, I pressed the top into the cinnamon sugar before baking.

 

It's a good job I was making them because my son was working here......... :D

Made some of these this afternoon, they are very nice although I only got 12 biscuits out of the ingredients, must have made them too big :roll: A great improvement over the ginger nut biscuits I tried to make last weekend. I must have rolled them out too thin and maybe cooked them for too long, although they looked very nice they were unbelievably hard, they were more like 'Ninja' biscuits if you had thrown one at somebody you could have taken their ear off :shock: DH refused to even try one he said he didn't want to risk damaging his expensive dental work :( Thanks for this recipe Lesley.

just made some with 'help' form my two year old!

 

They are in the oven.

 

Dont know if they are too big but I didnt get 40!

 

I have sprinkled with sugar but also added almonds to some.

 

Will let you know how they turn out.

UPDATE

 

Yummm...mmm.....they are very good! I have eaten far too many and not even had dinner! There is a problem with them though...they are too morish! Husband and son will be in later and hopefully they will eat quite a few for me!

 

I am giving some to my mum tonight so she can share the calories.

 

Wonder how many weight watchers points in one?!

Made a second batch at the weekend with choc chips! I am really trying to be good this week and these havent helped!!!

 

I still kept in some almonds as well as the choc - they went in a day!

 

Going to use the rest of the choc chips this week and add some cocoa (I use Willys Venezualn choc if you saw the programme) so they are double choc chip!

 

If the boys in work are lucky will make them a batch too.
