Space Chick Posted May 30, 2009 Share Posted May 30, 2009 Ok, here goes the Butterscotch Cheesecake recipe: Butterscotch sauce 50g butter 50g soft brown sugar 50g golden syrup Melt together over a low heat Add 2 tablespoons double cream, stir in and allow to cool completely. Cheesecake Base 200g digestives crushed 100g butter melted Add together put in a dish, put in fridge to chill whilst making topping Topping 300mls double cream (recently I've been using a whole elmlea double light to be healthier!) 100g icing sugar Whisk together until very thick Add a 250g tub of soft cream cheese Whisk in, along with a 2 tablespoons of the sauce Put over the base and chill for a couple of hours. Serve with some butterscotch sauce over the top (I use a Sauce bottle and do swirls) Any unused butterscotch sauce is fab with ice-cream Hope you enjoy, its a really easy recipe and tastes fab (if I say so myself! ) Link to comment Share on other sites More sharing options...

Had an absolutely glorious day, 25C, a nice breeze and some very nice cumulus clouds in the sky. We went to the park with what seemed like half of Leicester , played frisbee and had a picnic. We broke the frisbee so i nipped over the road to Halfords and got an Aerobie. I've wanted one of them since was a child, It was £12.99 and i thought, "you'd better fly well for that money" but it was amazing. It flew for miles with no ffort at all, best frisbee i've ever had! I'll be wearing trousers all week then and definately no swimming Honestly, i feel such a fool. I never catch the sun on my legs normally so yesterday really took me by surprise. It was a bit windy so I didn't notice, plus we were looking at all the chickens and chatting non-stop so definitely not paying attention . I am quite lucky though. I am red one day, then brown the next. A very bad advert for the sunscreen people .
