Chucky Mama
You could sweat them in a bit of butter and add some cream or creme fraiche and some Martini - yummy as a side dish. We also always add some leeks to mac and cheese.
chick wiggle
We love leeks here too. Put it in stews or just with any other veg plus the soup is delicious!

majorbloodnock
Slice them, fry them until softened. Make up a cheese sauce whilst they're softening. Add tuna to the leeks, then add the cheese sauce. Serve with pasta - conchigli, farfalle or fusilli by preference. Bet the sauce is ready before the water's boiled and the pasta's cooked. Lavenders_Blue
Leek and goats cheese tart Make (or buy!) a pastry case. Sweat onion, garlic and leeks. Add some herbs if you fancy. Tip into pastry case. Add blobs of goats cheese. Top up with milk/cream with an egg or two beaten in. Bung in oven until cooked.
Rhapsody
Slice and stir fry in sesame oil. Or chop and saute with quartered mushrooms until soft, chuck in a small pot of creme fraiche and a big splash of good quality soy sauce. Add black pepper to taste and serve with rice.
