Sticky sausage, thyme and apple bake

 

Ingredients:

1 tbspn olive oil

500g new potatoes, skins still on and thickly sliced

2 tbspns onion marmalade – I use a delicious one from Waitrose

2 Cox apples, peeled, cored and cut into wedges

2 tbspns chopped fresh thyme leaves

400g free range British pork sausages – I use ones from a local farm

300ml chicken stock – Kallo stock cubes are organic.

 

Pre-heat the oven to 180c, gas mark 4. Heat the oil in a roasting tin , add the potatoes and cook over a high heat on the hob until the taters start to brown. Remove from the heat and stir through the onion marmalade.

 

Add the apples to the tin and toss with the thyme and plenty of seasoning. Tuck the sausages among the potatoes and apples, then pour over the chicken stock to almost cover. Bake for 50-55 minutes until the taters are tender and the sausages are cooked through. Serve with shredded kale.
