Alis girls Posted December 1, 2012 Share Posted December 1, 2012 ES 17 yesterday and his mate discovered a Cheesecake recipe book on the bookshelf and spent a good hour drooling over the pictures I have been badgered for a week to make one so duly did a Vanilla one for dinner yesterday which was a hit with all even YS whos 11 and faddy! Before we had put down our spoons he said " great mum make one for Christmas" AAAAAAAAAAAAAAAAAAHHHH This book is old and American I think and having looked thro the book many of the others don;t appeal.Thats where you lovely folk come in. Anyone got an easy cheesecake recipe (have looked in Omlet CB) Not a cooked one Has nut allergy Isnt keen on citrus Egg famine at present and must have a biscuit base. Sorry long list but I have to say all the recipes tried on here have been good. And yes after the reports we read on teenage boys being obssessed with all manner of nasties - mine is obsseessed with cheesecake as is his mate. Oh and I am now planning to move all my cook books. craftyhunnypie Posted December 1, 2012 Share Posted December 1, 2012 We normally whisk together double cream, philadelphia & icing sugar for a cheesecake topping on the crushed biscuit & butter base. You can top with whatever you like then. Toffee Ice cream sauce works well. I'm pretty sure you can also add melted chocolate to the cheesecake mix to make a chocolate cheesecake & top with sliced mars bars & malteasers. Just grab a packet of frozen ones, defrost (if absolutely necessary), add a bit of sugar, cook, cool, pour over cheescake. Personally I hate overly sweet cheescakes and make a very zingy lemon one, but if he isn't keen on citrus then that's a no-no. Good Luck! Must try the ginger and white chocolate one for xmas - do any of you actually buy the Philly cheese - i use tesco everyday value cream cheese and its nicer than Philly and only 50p a tub!! merlina Posted December 20, 2012 Share Posted December 20, 2012 I use approx half and half digestive biscuits/ginger nuts for the base I sometimes sprinkle a little extra ginger powder in I use a mix of marscapone/waitrose value cream cheese (far nicer than philly)/cream/icing sugar depending what I have in. My 'posh' version has a layer of that, a layer mixed with stewed fruit (eg rasperry or blueberry) so it's a bright colour and then another white layer on top; usually topped then with fruit cooked with sugar so it's quite thick (almost jammy but not as sweet). I put various flavours in the cheesecake bit - lemon juice/orange juice etc just to stop it being too bland - but only if it's a posh one or I have some around I did a chocolate version once (added some melted choc to the base, did a thin ganache and choc and fudge bits for the top) - i didn't like it but others did In other words it's a recipe you can endlessly fiddle with My all time favourite version has a lot of lemon zest in the cheesecake mix and raspberry in the middle and top Quote Link to comment Share on other sites More sharing options...
