So am I although they are about 2cm long at the moment. If they manage to get bigger without having a disaster I will give this cake a try. My mum and dad are away next week and I am on plant watering patrol - including two courgette plants which I can see already have courgettes growing on them. I can see me having a go at this! This recipe sounds perfect, although I have already had an enquiry at work about when the chocolate courgette muffins will be back in season. Ain't Nobody Here Posted July 12, 2014 Share Posted July 12, 2014 I have made one . As usual with my baking, things didn't go that smoothly . I saw "loaf tin" but not the measurements they used so put it into one and it oozed out all over the oven . I rescued those bits though and they were lovely! I made a random cake today to use up some bananas, I didn't have much flour but I made it any using what I had, it was too wet and has turned out very moist! It is edible but not my best effort! Lavenders_Blue Posted July 18, 2014 Share Posted July 18, 2014 I made this cake today. I actually used the original recipe that was linked to in the blog, and it came out perfectly. It's yummy! The original recipe lists 'all purpose flour' in the ingredients, which is actually plain flour. I now wonder if SR flour plus the baking powder in the recipe made your cake boil all over the place, ANH? Mine certainly worked fine using plain flour. Preheat oven to Gas Mark 6, 200, 400 Grease and line a loaf tin. Then 150g butter, 150g coconut nectar (I'm using this instead of sugar now as I'm diabetic, you could use caster sugar), cream together. Add three eggs. Then 225g of grated courgette. And as it's called 'bread' in the recipe, I decided that qualifies it as a breakfast food. (Cake for breakfast? How continental ). What I have learned though, is that you can't make the icing by using granulated sugar because you've run out of icing sugar, and try to dissolve it in the lemon juice by heating it up on the hob.
