The Dogmother
Cook like spinach Hon. I've never eaten it as a salad, but I guess you can, the same as spinach.
Chicken Licken
you can steam it like spinach. the thick stemmy bits taste a bit asparagus like and you can remove the leaf and just eat the stems. I got it in my river nene book too and have loads growing ont he allotment.

Cinnamon
Thanks all - glad hens like it as I have now tried a bit raw & am very unconvinced any of my lot will at it raw or cooked
chickencam
If you steam the stalks and eat with butter and black pepper they are delish. I wilt the leaves in butter like spinach they are very similar so you can use them for any spinach recipe but take the thick stalks out first. A great veggie to grow it is much less likely to bolt than spinach and is fairly winter hardy. I comes in varieties with coloiured stalks therefore can be grown in ornamental beds as well provided there are no chicckens near by! Dancing Gal
As the others have said treat it like spinach - but I think it's much much nicer than spinach and so pretty. I eat the leaves raw in salad - very nice. umm making me hungry.
