Banana recipes anyone please?

Hi there, has anyone got any recipes for using up really ripe bananas? We go through phases of eating hundreds of bananas so I buy loads, then no one touches them for a week. :roll: Subsequently I now have 5 bananas that are really yellow and I only eat them when they're virtually green, the children don't like them too ripe either.

Smoothies are no good as mine love making them but won't drink them :shock: no pleasing some folk.

Any ideas, otherwide the chooks are going to get at least one of them

Cinnamon's suggestion is so worth a try--v. intriguing. Wonder who thought of it first? :shock:

 

I usually make banana bread (with or without walnuts) when I have a few turning brown. You could try adding mashed bananas to the recipe that uses the same weight of SR flour, sugar and butter as the weight of your eggs in their shells.

 

I always bake mine in a loaf tin for about an hour.

I discovered it about 12 years ago when on a diet in hot weather (now,why does that sound so familiar? :roll: )

 

They were so good that I sold them at my daughters school fete & sold out in 40 minutes :lol:

banana muffins ( I use this recipe all the time though luckily for me its already online)

 

Preparation Time: 25 mins

Cooking Time: 12-15 mins

 

Serves: 14

 

Ingredients

 

115g butter or margarine

175g brown sugar

115g golden syrup/honey

225g mashed bananas

200g plain flour, sieved

pinch of salt

1 tsp bicarbonate of soda

1½ tsp ground cinnamon

1 tsp grated nutmeg

50g currants/raisins

 

 

Instructions

 

1. Preheat the oven to 200C and place 14 paper cases in a muffin tray.

 

2. In a large bowl cream the butter until soft. Add the sugar and golden syrup and beat until light and fluffy.

 

3. Stir in the beaten eggs and bananas until well mixed. Sift over the flour, salt, bicarbonate of soda, cinnamon and nutmeg. Lightly fold these ingredients into the mixture.

 

4. Stir in the currants or raisins and spoon the mixture into the prepared muffin cases. The cases should each be about two thirds full of the mixture.

 

5. Bake in the centre of the oven for 12-15 minutes.

This is an intriguing recipe and it uses egg whites!

Banana Biscuits

Ingredients

4 ripe bananas, peeled

2 egg whites

Method

1. Purée the whole bananas and egg whites until smooth.

2. Spread the batter onto silicone paper on a baking sheet in a very thin layer. Bake in the oven at 180C/350F/Gas 4 for 20 to 30 minutes and once brown remove from the oven.

3. Remove the strips while hot from the tray and bend them into the desired shapes and leave to cool. If they do not become crisp, return them to the oven to cook for a few more minutes.

Or

Instant Banana Ice Cream this is useful as the bananas can be frozen, halting the ripening process, and you can make it when you have time.

Ingredients

4 bananas, peeled, cut into chunks and frozen

½ tsp vanilla extract

3-4 tbsp sweetener or sugar to taste

150ml/5fl oz buttermilk

Method

1. Tip the frozen banana chunks into the food processor. Add the vanilla, sweetener and half the buttermilk.

2. Turn on the processor and let it run for a few moments. Then, while it is still running, pour in the remaining buttermilk in a thin steady stream. Let the machine run until the mixture is beautifully smooth and creamy. Serve at once.

Or

Banana pancakes with toffee sauce, or chocolate sauce

Baked bananas, either whole unpeeled or peeled and baked with brown sugar and butter (and a bit of rum if you like!) Serve with ice cream or yoghurt and a bit of honey drizzles over, sprinkle with nuts…mmmmm.

Unpeeled bananas can be barbecued as the barbecue gets a bit cooler.

Have you got a sandwich toaster? Toasted banana sandwich, with a bit of cinnamon if you like it. I use brown bread.

You can also make a nice banana ice cream, that needs to be eaten straight away by blending frozen bananas with a little sugar and some buttermilk, it is very low fat and suprisingly tasty.

 

We make muffins and smoothies, I only like the muffins with walnuts in but 2 of my children won't touch nuts :(

 

Have you tried making the smoothies with frozen bananas a little milk and maybe frozen mixed berries added it then comes out much more like ice cream and tends to be more popular. I use a big plastic jug and a stick blender. They are very refreshing when they get in from school on a hot day. We freeze our allotment soft fruit and bananas for this purpose.

Wow, so many ideas! In fact I've made banana ice cream by mashing them into some vanilla - it's to die for. Then I thought, I'm on a diet :evil: so maybe I could mash some into some fat free yoghurt, add a bit of cinammon and freeze that - it was a bit acidic so I added some sweetner, it won't be a patchj on the ice cream but it might do when the kids are scoffing the ice cream in front of me. :roll:

my mum used to do a scrummy banana mille feuille (sp?)

 

layer of sweet puff pastry, layer of whipped cream, layer of sliced bananas, layer of puff pastry, layer of cream and so on and so forth. Finish with a layer of puff pastry and then make up some icing sugar with a bit of water and drizzle over the top and leave to set in the fridge.

ive made banana tarte tatin with puff pastry. i make the brown sugar and butter mixture and place in tin top with bananas (i slice them long ways) and then top with the pastry- and then cook in the oven. it doesnt look wonderful but taste great. Especially with cream!

My Mother-in-law just peels the over ripe bananas and puts them in a baking dish. She just sprinkles over Demerara sugar over them and warms them up in a medium oven until the sugar has melted and the bananas are even softer. Serve with cream or ice cream. If you want it really sickly, add a few pieces of chocolate.

 

OH splits the skins and inserts chunks of chocolate, wraps the whole lot in foil and lets them cook over the BBQ for a little while. To serve, slide out of the skins and add cream or ice cream.

 

These do nothing whatsoever to your waistline or cholesterol levels!

Thought I'd try this recipe this afternoon as we had some bananas left that were a bit too ripe.

 

Got to the stage where is said to add the beaten eggs. Look in ingredient list and no mention of eggs - oh :( Decided to add two (as if said eggs rather than egg). They're just cooling at the moment - will report back on how they turned out...
