:D That's great Martin. Of course we won't boo you here for enthusing about real food! Hurray, Bravo!

But then, as a Mum, I do have some sympathy with your family! Although, in our house, it's the other way around. My children, and LSH all :roll::roll: if I say something more than once. Which I do. A lot. :lol:

Lesley, it all looks fantastic, and I do admire all the new skills you must have learned along the way.

Well, Rosie and I had our bacon for lunch; I dry-fried it, cooked a couple of our eggs in the bacon fat, homemade bread with butter...

 

 

Absolutely fantastic!!!!!!

 

 

It smelled divine when I was cooking it, and I did it until it was nice and crispy.

 

Just great - thanks so much Lesley and Carl, and thanks also to those piggies for doing such a good job!

I'm glad you both liked it and (so far anyway) we don't appear to have poisoned you both :roll:

 

All day yesterday Carl was saying " I can't believe you've given bacon to Martin and Clare and we haven't tested it ourselves - what if we poison them?" :roll::roll::roll:

 

I had some baked beans with mine last night - they go well with the salty bacon. Carl can't eat egg with baked beans but he likes anything salty anyway.

 

I seem to remember reading somewhere that it is easier to almost freeze the bacon before slicing it in the machine - i will try to remember that for the next lot. The other three peices of the one side we've cured so far have been soaking in water for a further 24 hours. It seems to defeat the object of using a dry cure as opposed to brine :?
