The Good Life continued....

Recommended Posts

Seven  - seven altogether  - just to ask about duck eggs!:wink:

Continuing from another thread.........Emma - the cafe doesn't open until 8.30 on Saturday. The car park is just past the cafe on the same side - nearer to the traffic lights.

We will probably have Lauren with us as my daughter is here with me today and is really poorly with a migraine. i've just taken her to the doctor. The medication she's been given will knock her sickly for a good 24 hours :(

Pork ready to cure for bacon

Pork with dry cure

This should be ready in 5 - 10 days time, probably nearer 10 as the pieces are large.

Each side of bacon cut into 4 of these pieces - we have 4 sides to cure.

We have kept one whole ham out to cure - it will go into a brine cure today. We have frozen most of the other cuts.

Today we will remove the Chaps (cheeks) and cook those and then the heads will be cooked and all the small meat removed.

We were sorting all the meat out late into the evening - at the end, when we were both really tired, I asked Carl "what are those bits in that bag?" - we looked and found 'those bits' were the 4 tenderloins  They nearly got labelled as 'Sauaage' ready to use in a batch of sausages

That made me go  Lovely to see Jake and Lauren understanding where their food comes from. I'll put my bacon order in then  We hope we may get to a christmas market your way Lesley, just everything is all over the place at the moment, date wise.
