Cinnamon Posted April 18, 2009 Share Posted April 18, 2009 After a chat with Poet on Facebook about Ikea Swedish meatballs, I promised to post my recipe, which is really good. They freeze beautifully too Classic Swedish Meatballs 400g lean pork mince 1 free range egg,beaten 1 small onion very finely chopped or grated (I stuck it in the food processor) 85g fresh white breadcrumbs 1 tbsp fresh Dill chopped, plus more to serve 1 tbsp each olive oil & butter 2 tbsp plain flour 400ml hot beef stock,from a cube Mix the mince,egg,onion,breadcrumbs,dill & seasoning in a bowl & form into walnut sized meatballs (approx 20 ish) Heat the olive oil in a pan & brown the meatballs all over. You may need to do this in batches (I froze half before I browned them) Remove from the pan,& melt in the butter,then sprinkle over the flour & stir well. Cook for 2 mins,then slowly whisk in the stock,whisking until it makes a thick gravy, then return the meatballs to the pan. Heat through.
