Mrs Frugal Posted December 3, 2006 Share Posted December 3, 2006 Easy peasy lemon squeezy! I love making pasta, Laura. I've got a cheap pasta machine from Argos and it's simply 8oz pasta 00 flour to 2 eggs. I make mine in a big mixing bowl rather than on the worktop or table as it's not so messy. Put the flour in the bowl and make a well in the centre. Break the eggs into it and mix them into the flour using your fingers - very icky! Make it into a soft dough and knead for about 5 minutes until smooth. Wrap in clingfilm or put in a plastic bag and leave to rest for 15 minutes then you can put it through the pasta machine to make it the right thickness (or roll it with a rolling pin - very time consuming and not nearly so much fun) then you can either put it through the machine's cutter attachment to make tagliatelle or fettucine or cut it yourself into lasagne sheets. Leave to dry for a while (not always necessary as I've cooked it straight from the pasta machine before) and cook in boiling salted water for about 3-4 minutes until cooked! Yummy! It's also easier if you divide the dough into 4 pieces before rolling them through the machine as they're not so cumbersome when they're a bit smaller. Nicola H Posted December 3, 2006 Share Posted December 3, 2006 I don't think bread flour will work as well as the 00 grade Laura it needs to have lots of Gluten in it to make it more elastic if you use bread flour the dough may break up as it gets thinnner..............Have fun Emily and I love making pasta it gets very messy...... BUT - I also got Hugh FW's Family cookbook and he says that if you are making egg pasta, then you only need to use normal plain flour. Just need to try it out now - glad it can be done with just flour and water as we only have 1 egg left and no more in sight What proportions do you need if you are doing just pasta flour and water then?
