I made the fudge today .... yummmmmm

Ohhhh, could you post the recipe please?

I already have :? Its a few posts back

But here you go :)

Ingredients

125g/4½oz butter

500g/1lb 2oz dark brown sugar

120ml/4fl oz milk

250g/9oz crunchy peanut butter

1 vanilla pod, seeds only

300g/10½oz icing sugar

Method

1. Melt the butter in a saucepan over a medium heat.

2. Stir in the brown sugar and milk, and bring to the boil for 2-3 minutes, without stirring.

3. Remove from the heat, and stir in the peanut butter and vanilla seeds.

4. Place the icing sugar in a large bowl, and pour the hot butter and sugar mixture on top. Using a wooden spoon, beat the

mixture until smooth.

5. Pour into a 20cm/8in square baking tray, and set aside to cool slightly, then place in the fridge to chill completely.

6. Cut the fudge into squares with a sharp knife, turn out of the tin and store in an airtight container.

Thanks for posting that (again  ) bluekarin! :D:D

Will be trying that tomorrow!

your very welcome :D I have bought some crunchy peanut butter for the sole purpose of making this for this weekend. Just need to get the sugar and butter. Looking forward to trying it as I really love the sweet and salt together thing at the mo

I'll be trying it again with light brown sugar I think. The dark brown sugar made it too treacly for my taste.

The first mouthful was nice, but after 1/2 pound, it got too much.

Interesting, I nearly made this at the weekend, but only had light muscovado sugar in the cupboard, not the dark. I will make it with light and see how it turns out.

You know me Lesley, not a big sweet fan. I eat like a sparrow most of the time

Just like Lesley then! :D

I made some of the peanut fudge last night for easter gifts. It is setting in the fridge and I haven't cut/tried it yet. Not really got a sweet tooth, but Phil and Roise will enjoy it.

Made with light muscovado sugar, so I will report back on the taste. I also had a dab of condensed milk left in the fridge from something else I made, so popped that in as part of the milk measure.

I have made some this evening for Easter. I used light brown sugar and it is setting in a larger tray than mentioned in the recipe (a swiss roll one). The plan is to make the pieces smaller so then less sweet so then you can eat a bit more :lol:

Kids keep asking 'when's it ready?' Apart from YD who doesn't like peanut butter, or any nuts for that fact. But she does like sugar almonds

The contrast wasn't as sweet/salty as I hoped - maybe a pinch of salt would remedy that. Too sweet if anything. I used light brown sugar as well. Slightly grainy too - maybe didn't boil the sugar/butter/milk mix for long enough. I'm glad I did it in a larger tray so the pieces are so hefty. I shall see what the family think on Sunday as I am bringing some with me.
