henny penny Posted September 2, 2010 Share Posted September 2, 2010 Hi Have logged in a couple of times for inspiration but there hasnt been a lot of chat about preserving so I thought I would start the ball rolling and ask what are you preserving now? I have made this week- pickled beetroot, apple chutney, raspberry jam , onion marmalade, plum and apple mincemeat and hope to make more this weekend- any other suggestions? kerryegg Posted September 3, 2010 Share Posted September 3, 2010 I've done my bit. Lemon curd, apple jam ( not great but will do for pies ),pickled eggs, greengage jam and fairly recently damson jam. Christian Posted September 5, 2010 Share Posted September 5, 2010 I boiled up a huge pan of damsons and cooking apples yesterday, so will be making the jam today. Lots of red tomatoes for make a chilli jam with and yet more green tomatoes to make a chutney if I can face it later. Need a few more courgettes and will then attempt Mrs Frugal's courgette relish. I usually use white wine vinegar though, as I don't find it so harsh as malt vinegar, and if I remember rightly I also use less vinegar as there seems to be a lot in the recipe. But it tastes deeeeeeeeelicious! Edited to add - I made this chutney today and used 3/4 pint vinegar as it states in the recipe. It worked out fine so either the recipe has been altered since I last made it or my memory is playing tricks on me! I used smoked paprika as I wanted a bit of a kick but it might have to come with a health warning. Won't know until we can try it in a couple of months. I've made loads of jam over the summer and various chutneys (including a chilli-lilli which is just picalilli with added chillies) and I have put pretty covers on them and have made up a set of 12 to give to my DS and her OH for Christmas - they are very well off and don't really want much but love my home made stuff. This year I have made Jams Rhubarb and ginger Apricot and ginger (vv yummy) Plum (a bit runny) Blackcurrant Gooseberry and elderflower Strawberry & gooseberry Chutneys/pickles Green tomato chutney Spiced apple & date Chilli-lilli Beetroot & ginger Jellies Mint Redcurrant Phew! chickencam Posted September 7, 2010 Share Posted September 7, 2010 That spiced apple chutney sounds nice, I am not a huge fan of chutney, but I do like the ones that spices like coriander and cummin in them and I love paprika. Lavenders_Blue Posted September 13, 2010 Share Posted September 13, 2010 You might be able to if it's a bread machine that has a jam setting. You need to be able to simmer it to drive off some of the liquid and reduce it to a nice, thick, gloopy consistency. I use a preserving pan to make mine and it's very easy, you just need to be able to keep an eye on it, especially towards the end, so that it doesn't catch on the bottom of the pan.
