Family Buffet Ideas?

Hi all :)

 

Future inlaws came round today and MIL said they were having a buffet (close family) and it was suggested we all bring something. I thought about making a few egg based things, spanish tortilla with chorizo, but BIL is veggie so thought about making a veggie one too... Tortilla with sweet potato and substitute the chorizo with roasted butternut squash with chilli?? I may need to experiment but thought something different but tastey.

 

Any ideas (especially tried and tested would be great)

Personally I'd probably take quiche, uses lots of eggs and can easily use veggie and non veggie fillings.

 

For non veggies, you can't beat a good bacon and cheese.

 

For veggies, a mushroom is lovely, a mixed cheese and onion is also good.. Or the marinated peppers in a jar make a great filling too.

I am a veggie and would be extremely happy if you made me a Spanish tortilla :D Traditional tortilla only contains onions and potato (and egg of course) but hubby makes a mean tortilla with onion, potato, red pepper and some basil. Not completely traditional but very yummy indeed! I like it cold chopped into large cubes for a buffet.

I am veggie, and love this recipe for Tian - it is also a great hit with carnivores!

 

 

I med onion, co"Ooops, word censored!"ly chopped

3 tbsp olive oil

2 cloves garlic, co"Ooops, word censored!"ly chopped

450g courgettes

340g chard or spinach

55g rice

Sea salt and black pepper

3 large eggs, beaten

55g Gruyere, grated

30g Parmesan, grated

 

Cook onion in oil until it starts to colour, then add garlic and cook for a moment or two longer.

Grate unpeeled courgettes co"Ooops, word censored!"ly, add to onion and cook for 5 mins, stirring often.

Cook the chard or spinach, drain and rinse very well, squeezing out as much liquid as possible. Chop, then add to courgettes and cook for another 2-3 mins.

Cook rice as usual, drain and stir into the vegetables, season well.

Stir in the beaten eggs, then add the grated gruyere.

Pour into a buttered gratin dish and scatter the grated Parmesan over the top.

Bake for 35-40 mins at 350 F/ 180 C / gas mark 4, until puffy and golden brown.

 

It can be eaten straight from the oven, but I think it tastes better once it has cooled to room temperature.

You're right Emma, proper trifle doesn't have jelly in, but so many people do put jelly in and don't always remember that it's not veggie (unless you buy the veggie jelly crystals of course). A couple of friends came round for dinner once, and they insisted on bringing a pudding, which was really kind of them, only they made a big trifle with loads of jelly in! I was politely trying to eat around the jelly :lol:

it was last weekend and i made:

 

non veggie

spanish tortilla

sausage rolls using garlic and chilli sauage and spring onion and hosin sauage

scotch eggs using silkie eggs with honey and mustard sausage meat

 

Veggie:

BBQ pizza

roasted butternut squash with chilli tortilla

spinach, leek and gruyer cheese tart.

 

Went down a storm :)
