2 of my 3 raised beds are now empty (3rd will be when tomatoes finish) - so what can I put in them now / very soon ?

Seems a shame to leave them empty until next spring.

 

Any ideas ?

You can plant certain types of onion sets (Japanese I think) and in a couple of weeks, you can plant lots of garlic! I've just planted some young leek plants. Do you go to Saddington car boot sale? There's a good dealer there who sells all sorts of brassicas and winter hardy veg plants.

I've just planted swiss chard and turnips. Plus Black and curly Kale.

Just popped in my last beetroot seedlings to fatten up (under cover) and the last of my leeks are in. They are for late winter/spring, the autumn ones are already in. I also have Meteor peas to put in and hope for the best, otherwise I'll be sowing them in the greenhouse - unheated. I will also be hunting garlic and winter onions seeing as they were fabulous this year - Senshyu Yellow they were. Also you can grow salad crops under cloches too.
