I have to say that the Peanut Butter one was one I just found.....I've never made it but yes, it does say grill it!

 

Here is a photo ofWacky Cake with the cream cheese icing - it does look like Guinness Cake...

 

 

I looked at the recipe for Guinness Cake and I think if you swapped 1 cup of water for 1 cup of Guinness then it would be close enough to Guinness Cake.

Going to make these for our caravan rally at weekend. We are hosting a fundraiser cafe. If I make them tonight & freeze them until Thursday night / Friday morning - will they be ok. Also, I'm presuming they will be ok in the freezer in their paper cases?

I froze a whole load and they were fine.

The cases may come away slightly when they defrost but the cake will be fine.

Thanks - I made 18 of these last night. Aren't they easy & fail proof? I was very pleased!

They are very impressive. I'm going to make some more over the weekend. What could I put in them..do you think chopped up mars bar would work? with a nice chocolate buttercream on top & malteasers?

They are very sweet, so I found that some cream cheese icing was all that was needed.

Ok thanks cream cheese icing it is - with Malteasers on the top or mini eggs. Do you have a recipe for the cream cheese icing - quantities of ingredients mainly.

I just mix up some Philadelphia with icing sugar and a dab of vanilla extract, no strict quantities, just experience. Any extra keeps well in the fridge or freezer.

cream cheese icing is easy peasy. I normally start with cream cheese (Philly or similar) and beat it up. Add and beat in sieved icing sugar and vanilla or other flavouring until you get the consistency you want.

 

Some recipes call for butter and cream cheese - but tbh - cream cheese on it's own with the icing sugar is just as nice if not better.

I've just made a gluten free version of this by using rice flour for my sister who can't have wheat or diary. It worked!

 

I made 18 cupcakes, then iced them with a buttercream made from soya magarine. They were lovely!
