As long as you wash it properly to get rid of the excess buttermilk, then the keeping qualities are fine. I make butter in bulk, usually about 5 litres of cream at a time (I get the cream from Costco or Makro). I then make salted butter, unsalted butter, and flavoured butter. I pot it up (usually in Lock and Lock tubs), keep a pile in the fridge and then freeze the rest. The buttermilk is used to make soda bread, buttermilk bread, scones and pancakes. I've got a link somewhere to some very detailed instructions on using your food mixer... I'll go and see if I can find them.... Beki Posted March 30, 2008 Share Posted March 30, 2008 I made the butter (double quantities - 1 litre cream), and at one point i thought it wasn't going to work as the cream got stuck at one end for ages and wasn't moving! Luckily i had OH to hand and he put a bit of brute force into it and got it moving again for me The butter was lovely! We made it salted and gave half to my parents who said it was delish too! Try it - it's fab, and so easy! Doesn't work out any cheaper than buying butter, but gives you a sense of achievement, and the food always tastes nicer if you've made it yourself doesn't it?! I am looking forward to issue 2, as I have placed a 12 month subscription for this, purely based on the feedback on this forum. I have too say that I was not disappointed, and I have already made 1/2 lb of delicious organic butter (it was so easy and fun to do.) All I can say is that if you are thinking about this but not sure, then I think that you will not be disappointed, as it seems to promote a lot of the ideals and aspirations that are expressed on this forum.
